Quality assurance at Café de Eleta starts with strict attention to harvesting. Only ripened cherries are picked and transported to the mill just hours after harvested. Cherries are delivered to floatation tanks, to further sort out any under-ripe or damaged beans. The coffees are pulped, fermented, and delivered to the mill’s patio for pre-drying, which are then slowly dried at a constant temperature in wood-fire Guardiolas to ensure optimal humidity of 12% is reached before they are stored in wooden silos or jute sacks for 45-60 days

The Anaerobic coffee process is a meticulous and innovative method that transforms coffee beans into an exquisite sensory experience. Unlike traditional coffee processing, anaerobic coffee relies on a carefully controlled, oxygen-restricted environment during fermentation. After the ripe coffee cherries are depulped, the beans are placed in sealed containers, where the ABSENCE of oxygen influences the fermentation process.
