Today [ Flap Meat]
It is known as Kainomi カイノミ in Japanese. Taken from the short rib of the Wagyu beef. The block is easy to tell as it always come in triangle shape. It is a great part with strong meat flavour but tender. Many people regards it as the mini tenderloin due to the similarity in taste and texture.
Today [Premium Knuckle]
Known as Shin Shin シンシン in Japanese. Located at the centre part of the Knuckle. It is relatively less marbling compared to other cut. However, the meat itself is tender and come with an elegant and refreshing taste. Definitely worth to try if you already tired with marbling cut.
Ribeye is located between the shoulder loin and striploin. It is often regards as high quality part along with its brother, Sirloin. The shiny marbling is marvelous, and the texture is fine and buttery soft to the tongue. The sweetness of its Wagyu fat and the umami of the meat will fill your mouth with happiness.
Wagyu zabuton is a delicious and tender cut of Japanese Wagyu beef. It's known for its marbling and rich flavor, making it a popular choice for high-quality beef dishes. The term "zabuton" refers to a cushion or pillow in Japanese, which is a nod to the shape of this cut.
Wagyu Top Round is a part that comes from the round primal of the cow. It's known for its tenderness which gives it a rich and flavorful taste. Enjoy this cut with Yakiniku way. Lightly grill on charcoal and dip it with our homemade signature sauce to enjoy!!
