An exploration of the history of Pacifica cuisines and the foreign influence on each nation by chefs Siaosi Tavita-Brown (Kisa) and Jonny Taggart (LTD, Kisa), from French in Tahiti, Indian in Fiji, and Chinese in Samoa. This will be a night of learning, experiencing, and understanding just how these cuisines and their varied influences have been moulded into the flavours we see today as being traditional.
