It is with heavy hearts that we announce that Thanpuying Chanut Piyaoui, the visionary founder and honorary chairperson of Dusit International, passed away peacefully on Sunday 3 May 2020. She was 99.
While this is sad news, and she will greatly be missed, we are happy we can celebrate a life well and truly lived. Thanpuying Chanut dedicated her life to the betterment of others, and her fine example and lifetime of achievements, plus her wonderfully caring spirit, will continue to inspire everything that we do. We are thankful for everything she has taught us, and we are honoured to continue her legacy. She will forever be in our hearts and minds.
On this auspicious day, Dusit Thani Public Company Limited joins the Thai nation in graciously celebrating the first anniversary of the coronation of His Majesty King Maha Vajiralongkorn. Long live the King.

Where does the path to sourdough bread begin? Right in your own kitchen, with your own homemade sourdough starter of course. In 5-8 days, using DHMC's Pastry Sous Chef, Nadine Madrigal's recipe, simple ingredients and no special equiptment, your sourdough starter can be made into a crusty sourdough bread, pizza dough, waffles, pancakes, and rolls.

Our DHMC Manila Chefs are sharing their Work from Home Spanish Style Sardines recipe and it’s something you can put together easily yet so tasty. A meal packed with omega-3 making it really nutritious for everyone!
Ingredients:
1kg Sardines (tamabn, silinyasi,tunsoy)
3 tbsp Olives, green
9 Bay Leaves
3 tsp Garlic, thinly sliced
3/4 tsp Peppercorn
9 pcs Cornichon or 9 pcs Cloves, whole
3/4 cup Corn Oil or Olive Oil
3 tbsp White Vinegar
Oil for deep frying
Brine
4 cups Water
1 1/2 cup Salt
Procedure:
Before working with the fish, ensure jars are sterlized by washing it thoroughly and rinsing it well, followed by boiling it for 10 minutes and air drying, including the lids.
1. Wash fish and drain.
2. Cut off head, a notch below the jaw. Pull off innards and cut off the tail as well.
3. Wash for 2-3 times until blood is completely washed out.
4. Brine the fish for an hour. Place it in the chiller while brining.
5. Drain the fish from the brine.
6. Heat up oil on a deep pan. Ensure fish are completely dried before frying.
7. Fry in piping hot oil for 3-5 minutes, until crust develops.
8. Drain and cool completely.
9. Distribute into jars and arrange properly. Add the garnishes, and distribute evenly into jars, making sure it is packed tightly.
10. Pour 1 tablespoon of vinegar per jar.
11. Pour oil, 1/4 cup per jar or enough to fill up.
12.Arrange in pressure cooker and fill up with water, 2 inches taller than the jars. Pressure cook for an hour.

Winner of the 2019 Best Sommelier Competition in the Philippines, Ian Santos represents the country in the upcoming 8th Southeast Asia Sommelier Competition on the 7th of December 2019. He shares that his passion for learning about cultures through gastronomy with wine as his compass inspired him to pursue the Level 2 Awards in Wines and Spirits by WSET Napa Valley Wine Academy, Level 1 Introductory Sommelier Certification by the Court of Master Sommeliers Americas in Nashville, Tennessee and Level 3 Awards in Wines by the WSET in Napa Valley Wine Academy.
