If a picture is worth a thousand words, then HIS story could fill a novel. I first met Luis in 2005 when he was a student of the culinary arts & eager to learn and help with the opening of Marmalade. It was the beginning of a great journey of self-discovery for the both of us.

Luis & I nearly have an 18 year history together, starting with his apprenticeship, maturation & the development of my second restaurant, Jam Rum Bar & Bistro. Luis was a foundational piece for over 5 years in the restaurant's success. Following his tenure as a culinary instructor, our paths collided again with Luis' talents comingfull circle as a Jr. Sous Chef at Marmalade. He is a model of excellence, self-determination and an amazingly talented cook & dear friend of
mine.

His creative mind is always imagining new
ways to construct flavorful and wholesome
dishes infused with cannabis & h**p. One day he will fulfill his potential and hopefully be the first in P.R. to elevate this style of bistronomy.
