Over the past week, we had the pleasure of hosting 2 exclusive experiential dinners in collaboration with The House of Suntory. Launching the new limited edition Tsukuriwake series, the events showcased the synergy between the exceptional craftsmanship of Shinji and .
All 36 diners had only one word to describe the culinary-whisky pairing experience - WOW!

一握入魂 (hitonigiri nyukon)
A motto by our Executive Chef Kanesaka in Ginza,Tokyo.
It signifies that every piece of sushi crafted receives a portion of the soul and passion of the chef.

The calligraphy was commisioned 15 years ago by chef Kanesaka to inspire his chefs to follow the same saying.
Our Chefs at Shinji follow this motto to this day, pouring their soul into every sushi crafted for you.

Fresh and crisp flavoured fried Sawagani (J*panese freshwater crabs), topped with sesame and salt.

The seasonal dish is made from a species of freshwater crabs found only in J*pan. When fried, the exterior produces a chip-like crunch, complemented with its buttery interior.

Our 220-year-old hinoki (J*panese cypress) sushi counter.

Throwback to the construction of the first Shinji at Raffles Hotel in 2010 when J*panese craftsman flew in to meticulously work on this counter. Today, this iconic centrepiece continues to be cared for at Shinji Carlton Hotel.
