This bread makes the best sandwiches.

We have been making semolina custard because we like custard and also we’ve for a new sweet roll in the works. First add semolina and then add eggs.

It is difficult to describe just how delicious this labneh is. As we all now know greek yoghurt is strained yoghurt. The cultured milk is left to set and once that’s done the whole lot is strained to separate the whey from the curds. This leaves a much thicker creamier yoghurt. These clever Greeks! Now if you keep straining and straining you get an even thicker and more rich thing we shall now call labneh. Good with a generous pour of olive oil some salt and a piece of bread. Nee product alert: Fried halloumi sandwiches. We can’t get over how such a simple sandwich can have so much flavour happening in every mouthful. We fry the cheese in a small pan and then stack ut on some rocket and tomato plus some sliced purple onions. This sandwich on the sourdough granary but you could have ciabatta or rustic white too. For dine-in, take out and delivery. #

The Monte Cristo is a French-toast croque monsieur and they are fantastic. They are meant to have a bit of red currant jelly in them but we aren’t sure everyone will like that so we’ll serve that on the side.

Without a final shaping these loaves get thicker crusts and a more irregular crumb. They are left to proof for a day on the dough linen pushed up against each other and that helps to give them some semblance of uniformity. We score the loaves largely for practical purposes and so missed the boat for the decorative effects that it can have. For us it is to allow the loaf to bloom and to identify the white from the wholemeal sunflower seed bread; 3 for the white and 4 for the sunflower.
