OUR DOBUROKU WORKSHOP IS BACK!

In celebration of Doburoku Day, we invite you to once again to learn how to brew a home-made doburoku from your experienced team!

Participants will get to learn the ropes of basic doburoku brewing through first-hand experience, and get to take home the batch to finish the fermenting process and enjoy at home! Whether you're a seasoned homebrewer or a complete beginner, this workshop is the perfect opportunity to learn about and experience the history, culture and process of doburoku, and in turn, sake brewing.

THE JAPAN CRAFT SAKE BREWERS ASSOCIATION

OMU NOMU is proud to support the Japan Craft Sake Brewers Association, a group of young brewers who aim to modernise sake drinking and widen the scope of possibilities with Japanese fermentation and brewing. Creating a sub-genre of craft sake, the 7 member breweries are Librom, Happytaro, Konohanano, Haccoba, Lagoon, Wakaze and Ine to Agave.

Working on a different type of brewing license, craft sake brewers adopt sake making processes and techniques, but by incorporating auxiliary ingredients into the brew, thus creating a unique form of sake beverage which does not fall under the spectrum of traditional sake.

These include fruited sakes, doburoku, hopped sakes, infused sakes and so much more. Rather than sticking to the norm, craft sake brews are small in volume, extremely seasonal and highly creative.

WHY DRINK CRAFT SAKE?

Through our trip through Japan we’ve seen how these independent brewers work with bars and concepts to spread awareness about craft sake while pairing them with delicious foods not only to compliment but enhance the foods and drinks.

The craft sake movement is diverse and fun. It has simplicity, and yet a novel complexity unique to the craft genre. With easily identifiable ingredients and concepts, it is easily relatable, and always surprising.

Perhaps, it isn’t traditional sake, but what even is sake anyway?

THE NEXT GENERATION OF SAKE DRINKERS

Why aren’t Japanese youth drinking sakes? Seen as an old fashioned drink, many young drinkers turn to wine, cocktails and Western spirits as the trendy and fashionable drink.

The craft sake industry, with its advantage in brewing freedom, has created a sub-genre of sake which maintains traditional brewing methods, but is boundless in ingredient choices. This creates apparent flavour concepts which are easily identifiable, cocktail-esque and unique to craft sake

THE REVIVAL OF DOBUROKU

Doburoku is the genesis of all sake, with roots tracing back to ancient times where rice farmers would make doburoku at home.

Following a long lasting prohibition, it was only recently that the beverage was revitalised for brewing. With these changes, there’s been a resurgence of micro-breweries and ryokans all over Japan brewing the style, aiming to revitalise lost culture and share with the world a new yet old sake style.

What would you expect from doburoku? A completely unpressed , it is a ricey, creamy beverage ranging anywhere between rice pudding and yoghurt. A unique texture is the signature of doburoku too, either with chewable whole rice grains, to a thick rice puree.
