Curious about this Hungarian Pork? Also known as the “Wagyu of Pork”? It is a heritage pork from Hungary, that almost went extinct 4 decades ago. Developed in the 19th Century by cross breeding Hungarian pigs, these fat hogs didn’t require a lot of special care, had a lot of lard, and a body of curly hair. However, with refrigeration and need for fast growing pigs it started to see a declined and eventually nearly went extinct. Well, thank goodness it has been rescued and now back on our plates. Chef has been using this pork since imported it in 2014 and has seen it on and off menu since. Produce with good is key at Morsels.
