Chili Chicken
Time: 30 min
Serves: 4
Difficulty: Easy
INGREDIENTS
400g chicken breasts cut into cubes
1 tablespoon cornstarch
2 tablespoons soy sauce
Borges Classic Olive Oil
1 onion
2 cloves of garlic
1 green pepper
2 green chilies
60 g tomato sauce
1 tablespoon chili sauce
Salt and pepper to taste
STEP BY STEP
Step 1
Mix the chicken cubes with the cornstarch and soy sauce. Season with salt and pepper to taste. Leave to marinate in the refrigerator for 15 minutes.
Step 2
Brown the chicken for a few minutes in a pan with a generous splash of Borges Classic Olive oil. Remove using a slotted spoon, leaving the oil in the pan, and set aside.
Step 3
In the same oil, brown the onion and garlic for a few minutes. Add the pepper, sliced into strips, and the chilies. Cook until the pepper softens.
Step 4
Add the tomato sauce, chili sauce and a splash of water to the pan. Cook everything over low heat for a few minutes.
Step 5
Add the chicken, mix well, add salt to taste and serve very hot. Accompany with rice or potatoes.
Spaghetti all’assassina
Time: 25 min
Serves: 4
Difficulty: Easy
INGREDIENTS
400 g spaghetti
4 cloves of garlic
2 chillies
100 g tomato sauce
2 L water
4 tablespoons tomato paste
A splash of Borges Extra Virgin Olive Oil
A pinch of salt
A pinch of black pepper
STEP BY STEP
Step 1
In a wide, deep pan, sauté the finely chopped onion and garlic in a drizzle of extra virgin olive oil. Add the tomato sauce and cook for a few minutes, stirring constantly.
Step 2
Add the spaghetti to the sauce and let it cook on both sides. Season with salt and pepper to taste.
Step 3
In a separate bowl, mix the water with the tomato paste and add this mixture to the pan to finish cooking the spaghetti without an excess of water. Add salt to taste if necessary.
Step 4
Remove from the heat when the spaghetti is fully cooked and has absorbed this strong, flavorful broth. Serve topped with grated parmesan.

Fried Shrimp
Time: 20 min
Serves: 4
Difficulty: Easy
INGREDIENTS
• 350 g peeled shrimp
• 1 teaspoon salt
• 2 eggs
• 100 g breadcrumbs
• 150 ml Borges Classic Oil
STEP BY STEP
Step 1
Heat the Borges Classic Oil in a skillet over medium-high heat.
Step 2
Drain the shrimp well, dip them in the beaten eggs (salted) and then the breadcrumbs, making sure they are well coated.
Step 3
Fry them in small batches to prevent the temperature of the oil from dropping, and move them around with a slotted spoon to keep the breading uniform. It’s also important to make sure the shrimp are entirely covered by the oil.
Step 4
Remove them from the heat and let them sit on cling wrap for a few minutes to absorb the oil.
‘Birria’ Tacos
Time: 120 min
Serves: 4
Difficulty: Easy
INGREDIENTS
600 g of meat for shredding (birria)
1 clove of garlic
1 onion
1 chili
3 tomatoes
A splash of Classic oil Borges
12 corn tortillas
150 g fresh cheese
1 teaspoon spices to taste: cinnamon, oregano, marjoram, etc.
STEP BY STEP
Step 1
Brown the onion and garlic in a saucepan with plenty of Classic oil. Add the meat, chili and spices and cook everything together.
Step 2
Pour in about 700 ml of water and the tomatoes, sliced in half. Cook over medium-low heat for an hour and a half, until the meat softens. Adjust the amount of water (adding or removing) if necessary.
Step 3
Take the meat out of the pan, shred it and add it back to the sauce. Cook for a few more minutes.
Step 4
Heat the tortillas in a dry pan. Serve the meat with the tomatoes on the side, the tortillas, a bowl of cubed fresh cheese to add to the tacos, and a cup of broth to dip them in.
Step 5
Complement with pico de gallo if desired and enjoy!
Pasta with Cottage Cheese
Time: 30 min
Serves: 6
Difficulty: Easy
INGREDIENTS
500 g penne Borges
250 g cherry tomatoes, sliced in half
4 chive leaves
2 tablespoons lemon juice
100 g chopped walnuts
Salt and pepper
2 tablespoons Borges extra virgin olive oil
300 g cottage cheese
A few leaves of fresh basil
100 g grated Parmesan cheese
STEP BY STEP
Step 1
Cook the penne following the instructions on the package. Set aside a cup of the cooking water.
Step 2
Mix the tomatoes, chives, lemon juice, chopped walnuts, pepper and a pinch of salt in a large bowl. Pour in a tablespoon of Borges extra virgin olive oil and stir.
Step 3
Add the hot pasta and the cottage cheese and stir again. Add in the pasta water little by little, until the mixture is no longer dry. Add salt to taste if necessary.
Step 4
Garnish with some basil leaves and serve topped with Parmesan cheese.

Grandma’s chicken and rice
Time: 30 min

INGREDIENTS
1 large chicken breast
1 tablespoon Borges white balsamic vinegar
1 tablespoon soy sauce
A pinch of oregano
1 medium onion
2 cloves of garlic
200 g rice
100 g green peas
1 teaspoon turmeric
A splash of Borges extra virgin olive oil
400 ml water
Salt and pepper
STEP BY STEP
Step 1
Dice the chicken, season with salt and pepper, add the vinegar, soy sauce and oregano, and refrigerate for one hour.
Step 2
Brown the onion and garlic in a pan with a splash of extra virgin olive oil.
Step 3
Add the chicken breast and cook until browned.
Step 4
Pour in the water (preferably lukewarm) and cook the rice over medium-high heat for a few minutes.
Step 5
When the water in the rice has begun to evaporate, lower the heat, cover the pan, and continue cooking for a few more minutes. Add salt to taste if needed.

Tunacado
Time: 10 mins
Difficulty: Easy
INGREDIENTS
1 can of tuna packed in water
2 tablespoons mayonnaise
Salt
2 thin slices of whole wheat bread
1 small tomato
½ avocado
8 Borges Green Olives
For the pesto
50 g fresh basil
100 g Parmesan
30 g pine nuts
1 clove of garlic
80 ml Borges Extra Virgin Olive Oil
A pinch of salt
STEP BY STEP
Step 1
Drain the tuna. Mix it with the mayonnaise and a pinch of salt.
Step 2
To make the pesto, blend all the ingredients carefully: add the extra virgin olive oil little by little, while slowly blending. Adjust the amount of oil to achieve the desired density.
Step 3
Spread the pesto on a slice of bread and then add the tuna and mayonnaise mixture. Lay the tomato and avocado slices on top, as well as the sliced olives.
Step 4
Close the tunacado with the second slice of bread. To make things more fun, another later can be added to make the sandwich a triple decker!
Tasty and nutritious pasta salad
Time: 20 min
Serves: 4

INGREDIENTS
320 g Borges Farfalle
2 ripe tomatoes
1 medium avocado
60 g sweet corn
80 g diced feta
2 cans of tuna in olive oil
For the vinaigrette:
60 ml Borges Extra Virgin Olive Oil
1 tablespoon apple cider vinegar
1 tablespoon lemon juice
1 tablespoon Dijon mustard
STEP BY STEP
Step 1
Cook the pasta according to the instructions. Set it in the fridge until it cools.
Step 2
Add the diced tomatoes and the avocado, also diced. Mix in the corn, feta and tuna.
Step 3
For the vinaigrette, mix the extra-virgin olive oil with the apple cider vinegar, the lemon juice and the Dijon mustard.
Step 4
Pour the vinaigrette over the salad and serve very cold.
Pizza pasta
Time: 40 min
Serves: 4

INGREDIENTS
400 g cooked Borges Spaghetti
2 eggs
Salt, pepper and oregano
300 g grated mozzarella cheese
150 ml whole milk
250 g tomato sauce
1 large tomato
100 g Borges Black Whole Olives
A few leaves of fresh basil
A splash of Borges Extra Virgin Olive Oil
STEP BY STEP
Step 1
In a large bowl, beat the eggs, season with salt and pepper, and add the oregano and half the mozzarella. Add the milk, tomato sauce and extra virgin olive oil and stir until all the ingredients are fully mixed. Milk can be added as much or as little as needed, to adjust the thickness of the sauce, which will largely depend on the size of the eggs and the consistency of the tomato sauce used.
Step 2
Add the spaghetti to the egg mixture. Stir well and transfer the ingredients to a baking sheet. Spread to form a very thin layer, like a round of pizza dough.
Step 3
Top with the remaining mozzarella, a few tomato slices and the sliced olives. Bake at 180 ºC for 15 minutes.
Step 4
Garnish with some basil leaves before serving.
What’s the one thing we need in any salad?
Salads might seem too simple to some but it’s actually the best dish to let our creativity shine through. Not forgetting to have some fun while we’re at it! Lettuce? That’s a little predictable. Tamarind chicken
Time: 30 min
Serves: 4
Difficulty: Easy
INGREDIENTS
4 chicken thighs, halved
80 g tamarind powder
1 chili pepper (optional)
50 ml orange juice
50 ml Borges balsamic vinegar of Modena
250 ml chicken broth
1 teaspoon ground cumin
Salt and pepper
A splash of Borges Classic olive oil
STEP BY STEP
Step 1
In a deep frying pan, sauté the tamarind powder with a splash of olive oil. Add a chili pepper to add a bit of a kick.
Step 2
Pour in the orange juice and balsamic vinegar and cook for 15 minutes over low heat.
Step 3
Add the chicken broth, cumin, salt and pepper, and cook over low heat for a few more minutes until the sauce reduces.
Step 4
Fry the chicken in a separate pan in olive oil. Season with salt and pepper, remove from the heat and serve with the tamarind sauce. Accompany with a side of rice or mashed potatoes.
The best cod fillets
Time: 40 min
Serves: 4
Difficulty: Easy
INGREDIENTS
1 kg cod fillets
1 kg potatoes
1 onion
A splash of Borges Sunflower & Extra Virgin Olive Oil
1 teaspoon fresh rosemary
Salt and pepper
STEP BY STEP
Step 1
Cut the potatoes into 1 cm thick slices and place them on a sheet pan. Add the julienned onion. Season with salt and pepper and add a splash of sunflower oil.
Step 2
Bake for 10-12 minutes at 180 ºC, stirring occasionally.
Step 3
Remove the pan from the oven, set the cod fillets on top and add a little more oil. Season with salt, pepper, and rosemary and bake for another 15-20 minutes.
Broccoli with cashews
Time: 15 min
Serves: 4

INGREDIENTS
1 large head of broccoli
80 g cashews
Salt and pepper

Step 1
Wash the broccoli, slice it into florets and steam for 4 to 5 minutes.

Zucchini fritters
Time: 20 min
Serves: 4
Difficulty: Easy
INGREDIENTS
1 large zucchini
1 potato
2 cloves of garlic
1 egg
A pinch of fresh parsley
60 g flour
Salt and pepper
A splash of Borges Sunflower and Extra Virgin Olive Oil blended oil
STEP BY STEP
Step 1
Finely chop the zucchini and potato in the food processor along with the two cloves of garlic (alternatively, you can grate them by hand).
Step 2
Beat the egg and add it to the vegetables. Add the parsley and flour and stir well until the mixture is uniform.
Step 3
Form the mixture into round fritters, approximately one centimeter thick, and fry them in a frying pan with plenty of ORGANIC extra virgin olive oil or SUNFLOWER oil.
Step 4
Set them to drain on a paper towel to remove the excess oil.
