We took our Prime Beef Belly and simmered it with some sweet onions, soy sauce, sake and mirin. Then we put it over some freshly steamed white rice, added a sous-vide onsen tamago on top, and threw on some sliced scallions.

A lot of customers have asked us why we charge for extra sauce and assume we just use something store-bought.

The answer is simple:
💫 We make our own Goma sauce by hand in small batches twice a week
💫 We use high quality ingredients like 100% pure sesame and Kewpie mayo
💫 It’s a labor intensive process that involves mixing the sesame purée a little bit at a time and then pressing the entire batch through a sieve to ensure that there are no lumps
💫 The end result is a seriously smooth, nutty, sweet and salty dipping sauce with just the right amount of acidity to it

We might be biased but it might be the best Goma sauce we’ve ever tasted. The perfect pair for a piping hot slice of shabu shabu meat 🥩
