Sometimes we get asked about the 5% kitchen service fee included on all of our checks. This fee is something we’re proud of and have no intention of doing away with. It ensures our kitchen staff gets some extra appreciation in the form of bonus compensation on top of their base pay, which is itself among the best in town.

When you leave a tip at any restaurant in North Carolina, 100% of that amount goes to the waitstaff and cannot legally be shared with members of the kitchen team. Within the restaurant industry, there is a significant pay disparity between front of house (servers, bartenders, hosts) and back of house (cooks, dishwashers) staff, and tipping is part of that equation. We want to level the playing field and make sure everyone who works for us earns an income that is well above the minimum standard of living. With the service fee, we ensure that 5% of each check goes directly to the back of house staff.

The visibility of the fee is a matter of accountability. If we were to just build the 5% into the price of the food as some suggest, we would lose that transparency about where the money goes. With that amount broken out in the bill, the kitchen staff knows how much they're owed for their labor. It is by far the simplest and most ethical way to achieve the goal of closing the pay disparity gap for our staff.

Additionally, the service charge scales with the business, which means that the more money the restaurant makes, the more money the kitchen staff gets to take home. They get to feel excited rather than stressed when they see that the restaurant is busy. If they have a hard shift, they know that will mean they get to take home extra pay, guaranteed. This is an incredibly beneficial and progressive pay structure that most American workers don't get to enjoy in any industry. In most cases, if you work harder, the boss takes home the extra effort. We want to make sure that doesn't happen, and that our hardworking team members get to see their efforts pay off in the form of higher compensation.

The bottom line is that the incredibly talented people working in our kitchen deserve an extra thanks at the end of the meal just like your servers do, and the 5% fee is our way of making sure they get it.
