Today At Mamacita’s, a seafood classic from El Chapo’s coastal state of Sinaloa. These cheesy shrimp and poblano chile tacos were invented by a hotel chef as a special dish for a visit from the Governor…or so the story goes. Here in North Cackalackey we gabachos affectionately refer them as Tacos Al Guvnah! They rock our socks off and hope you love them too!

In today’s Employee Spotlight we’re giving an extra special, HUGE shoutout to the man himself, James Aka Jimmy Magik!
James has been a part of Mamacitas since the very beginning, in fact before the beginning. Our owner John met him as a carpenter’s helper, he was helping to frame Mamacitas during our initial construction. He had just left Salsa’s after seven years so we knew he could cook, as Chef Diaz over there is still one of Asheville’s most creative chefs. And we began talking about our love of good food and that conversation has never ended.
Things you might not know:
He use to ride wheelies on his Harley through downtown Sylva, NC (his hometown).
He’s a good boxer and used to be a bouncer.
He use to own a record company called Ruby Records in Raleigh!
He is one of the best Dad’s ever, who tries to leave early each weekend to go fish or hunt with his son, Clifford.
He had a drink named after him.
Our hot sauce is named after him, Magik Sauce.
John named his son after Jimmy, he’s that dear and special to him. A truly amazing person!

We want to wish a very Happy Birthday to our sister in salsa, the burrito boss, our taco-tastic GM Leisa Payne!
This is Francisco, he’s part of the original Mamacitas crew from our opening year in 2004! He helped us open Taco Temple, too.
He has several nicknames: Poncho, Franco, and Squirrel 🐿️ (squirrel because he loves to snack and stashes goodies all over the place).
He is an amazing cook, some of the best cooks in the world originate from Puebla, Mexico (which is where his family hails) and he often shares his family’s recipes such as Tacos Arabes with a chipotle Coca Cola salsa and some mind blowing chile-spiked Mexican meatballs “albondigas.” Puebla is beautiful and well worth checking out on your next trip to Mexico.
Franco is a beautiful soul and we sure love having him work with us.
