What a fun month we had making container gardens with participants in our SNAP-Ed NY program!
As part of the Healthy for Life curriculum (written by the American Heart Association - New York State and Aramark) we were able to offer seniors across Broome County an opportunity to have their own salad gardens! They planted tomatoes and lettuce and were able to take their gardens home with them.
Want to participate in a Healthy for Life experience? Call the CCE office at 607-772-8953 to learn more!

Over the past year, our team has been working very closely with Seton Catholic Central's Sustainability Club on their school garden and composting program. Seton received funding from our 'Creating Healthy Schools and Communities (CHSC)' grant with the Broome County Health Department.
The students have been taking care of 6 garden beds and working on a composting initiative to compost all the scraps from the school kitchen! Next they would like to get the whole school involved, composting leftovers from their lunches!
In May, the club presented to folks from across the state who participate in the CHSC grant within their own counties. It was a great opportunity for them to show off all their hard work and inspire others!
We can't wait to see how this program develops! The students who started the club are currently seniors, and are working closely with the next graduating class to sustain the program.

Alyssa, thank you for 10 years of dedication to the SNAP-Ed program!
Alyssa started as a SNAP-Ed nutrition educator in 2015. Since then, she has taught in hundreds of classrooms reaching thousands of students throughout Broome County. Alyssa loved how excited the students always were to learn about nutrition and participate in taste tests.
Alyssa isn't going far! She has transitioned to her new role within CCE Broome as the Digital Marketing and Design Coordinator.
On her last day teaching yesterday, a mother was at the school, and she shared that what Alyssa has taught her daughter in the classroom is making a difference at home and they're eating better as a family. Thank you Alyssa!

Yesterday's Mental Health Day at Glenwood Elementary in Vestal Central School District was a fun-filled day of learning! Caitlin, our youth SNAP-Ed nutritionist, taught over 300 students throughout the day about MyPlate and eating nutritious foods.
They each got to sample one of our favorite recipes, the Pumpkin Oat Energy Bites! Around 90% of youth gave it a thumbs up!

Today we were honored to host individuals from across the state who work on the Creating Healthy Schools and Communities Grant (CHSC). They visited CCE Broome as part of a tour during their state-wide conference which was located here in Binghamton!
CCE Broome works in collaboration with the Broome County Health Department for efforts related to the CHSC grant. Over the past 3 years we have worked with school districts on their garden and composting programs.
Our campus has benefited greatly from the grant - last year we installed 6 bike racks that were created by BT BOCES welding students. This year we completely revamped our Community Composting Site, which provides compost to our Cutler Botanic Gardens, and even more specifically our vegetable gardens where Master Gardeners grow produce that is provided to the Broome County Public Library as part of the Farm to Library Program. Members of the public can take the produce home with them when visiting the library, providing an access point to fresh fruits and vegetables in downtown Binghamton.
We were also able to tour them through our Farmers Market, Commercial Kitchen, and Taste NY store! Thanks for visiting with us!
We've been having so much fun at Windsor Central School District, Whitney Point Central School District, and Union-Endicott Central School District this month!
Caitlin, our youth SNAP-Ed nutritionist, has been visiting a lot of classrooms talking about MyPlate, Fruits and Veggies, and foods that are 'Go, Slow, Whoa!'
Students have tasted different colored peppers, fruit salads, pizza hummus, and 'un-BEET-able' berry smoothies!
The end of the school year is almost here! We look forward to summer camp programs!

Happy International Hummus Day!
Happy National Shrimp Day🍤
Air Fryer Coconut Shrimp:
Ingredients:
1 pound shrimp raw, large, peeled and deveined with tails attached
¼ cup all-purpose flour
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
2 large eggs
¾ cup unsweetened shredded coconut
¼ cup panko breadcrumbs
Cooking spray
sweet chili sauce, for serving
Instructions:
1.Preheat the air fryer to 360°F. When heated, spray the basket with cooking spray.
2.Combine the flour, garlic powder, salt and pepper in one shallow bowl. Whisk the eggs in a second shallow bowl. Then combine the shredded coconut and panko breadcrumbs in a third shallow bowl.
3.Dip the shrimp into the flour mixture, shaking off any excess. Dredge the shrimp into the eggs, and finally into the coconut panko mixture, gently pressing to adhere.
4.Place the coconut shrimp in the air fryer so they are not touching, and spray the top of the shrimp. Cook for 10-12 minutes, flipping halfway through.
Garnish with chopped parsley, and serve immediately with sweet chili sauce, if desired.
