For the first time, we had Chef David Vargas come teach our students! His culinary teaching was centered on the flavors of Mexico. He taught us the process of nixtamalization, which he calls nixtamal. To turn his heritage New Hampshire corn into masa and ultimately into tortillas. Thank you Chef and we hope to see you again soon!
