We did a thing today 🎉 the groundbreaking for the wharf rebuild is something we’ve been working on for a long while now! And today was the start! 💪🏽 I’m so honored and grateful to be a part of this project and ready to get the job moving! 👏🏻

Chicken Saltimbocca- last minute style 😆

Doesn’t have to be overwhelming! I used thin sliced chicken breast topped each w/ fresh sage & prosciutto, sautéed in olive oil for a couple minutes.
Remove chicken, add butter, white wine & more fresh sage to the pan, let it bubble up then add the chicken back in and top with Parmesan to melt! 😋

Your gal got hit this New Year! Yup down for the count, not COVID, not the flu 🤧 but something got me real good- income the homemade soup! It’s what’s for dinner! 😋

•Sauté onions, carrots, celery (I also added broccoli 🥦 cause it’s my fave fave) with some salt & pepper & oil
• will tell you to also add a couple bay leaves-he loves it so I do it 😉
•Add in some stock (beef, chicken, veg, whatever you’re into!) and P.S. store bought is just fine, cause no one has time for that
•Bring to a boil & add your chicken (or don’t! This can be totally veg) then let simmer for a few
•Pull out the chicken & shred it with a couple of forks then throw it back in for a bit add leafy greens to finish and the ready to serve!
•Here I added celery leaves & fresh jalapeños 🌶 since I wasn’t feeling all that great
•Pretty simple & yummy way to get in lots of veggies of your choice & protein too! A great go-to for under the weather folks or just a cold stormy day

Super simple chicken and Arborio rice soup
•Sautée diced onions & Arborio rice with olive oil
•add in chicken breast & 1 carton chicken stock
•bring to a boil & add celery, carrots, bell pepper & 1 cup water
•let simmer until rice is tender
•enjoy!
