I know a lot of our members struggle to get enough protein so this recipe is for YOU! Start the day off with these healthy egg muffins – a simple mixture of eggs and your choice of vegetables, cheese, and herbs baked into tasty mini frittatas!
Egg base
1 tablespoon
6 large eggs
¼ cup milk - optional – you can substitute for any plant-based milk or omit it entirely
Salt and pepper to taste
Feta, Cherry Tomatoes & Basil (for 6 egg muffins)
¼ cup crumbled feta
12 cherry tomatoes
12 basil leaves
2 spring onions - finely sliced
Mushrooms, Parsley & Parmesan (for 6 egg muffins)
1/2 tablespoon
2 cups chestnut mushrooms
Salt and pepper
3 tablespoons fresh parsley - chopped
¼ cup grated parmesan
Bell Peppers, Sundried Tomatoes & Spinach (for 6 egg muffins)
1/2 tablespoon
1 bell pepper - chopped (I used ½ green and ½ red bell pepper)
Salt and pepper
3 sundried tomatoes
2 cups packed fresh baby spinach
Fill each muffin tray with the egg mix until they are ¾ full, and bake at 400F (200C) for 15-20 minutes until the egg muffins look golden on top. Remove the pan from the oven, let the muffins cool slightly, and then remove them from the pan.

Pinwheel:
Regular burrito size tortillas work, but I prefer Flatouts Flatbreads – 1 per serving
Laughing Cow spreadable cheese wedges – 2 wedges per serving
Or .75 oz pesto cream cheese (or plain)
Or 1 TB mayonnaise/mustard
3–4 slices turkey deli meat, thinly sliced (about 4 oz per serving)
1 slice of cheese
Baby spinach, romaine or other greens you like (about 1 handful per serving)
Meal Prep Sides (pictured):
1 oz nuts such as almond or cashews or a mix
as many berries as can fit into your meal prep container

Orange Cinnamon Mock Toddy ☕️ Boost your immune system this holiday season with an extra dose of vitamin C in this wintery mocktail!
Ingredients: (Serves 4)
2 cups Orange juice
2 cups Apple cider
1/2 cup Cranberry juice
2 tbsp Cinnamon spice
Dried blood orange slices for garnish
Directions: On a stovetop, add all ingredients to a sauce pan and heat on medium-high for 10 minutes or until warm.

Did you forget to meal prep last night? Check out this super simple way to pack a lunch this week that will keep you on track! We love this because it's full of protein, customizable and ready in just 10 minutes! Use your favorite veggies and dip along with your favorite fruits! Recipe linked below from PROJECT meal plan ⬇️
INGREDIENTS
16 ounces cooked boneless skinless chicken breast (see notes for cooking method ideas)
1 cucumber, peeled and sliced
1 red bell pepper, seeds and stem removed, cut into strips
1 large carrot, peeled and cut into strips
1 bunch of red seedless grapes
4 ounces cheese (I used smoked gouda)
8 ounces hummus
your favorite cracker, pretzel thins, or pita chips (stored separately)
INSTRUCTIONS
Prep & portion produce: Wash and prep the cucumber, bell pepper, carrot and grapes, then separate into four even portions and add to meal prep containers.
Prep & portion non-produce: Cut and add 4 ounces chicken breast and 1 ounce cheese, as well as 2 ounces hummus to each container. Use a kitchen scale if needed. Pictured are these 3 compartment glass meal prep containers.
Serve & Store: Enjoy immediately with crackers or pretzels. Keep stored in airtight meal prep containers in the refrigerator and enjoy within 4 days for best quality.

Crispy Baked Butternut Squash Strips! Check out this healthy recipe from that just might find it's way onto your thanksgiving day table this week! Recipe below ⬇️
ingredients:
1 small butternut squash, peeled
3 tbs olive
3 tbs corn meal (or breadcrumbs or almond flour)
3 tbs grated Parmesan cheese*
1/2 tsp each garlic powder, onion powder + dried oregano
salt to taste
instructions:
1. Preheat your oven to 375°F. Line a large baking sheet with parchment paper.
2. Slice your butternut squash into thin strips, between 1/8 and 1/4 inch thick.
3. Transfer to your sheet pan and toss with with the olive oil, corn meal, parmesan, garlic powder, dried oregano, onion powder and salt to taste. Coat all pieces well and spread out – its okay if some are over lapping. Bake for 25-30 minutes or until fork tender.
notes:
To make this vegan, substitute Nutritional Yeast for the parmesan cheese.
A good substitute for the cornmeal would be breadcrumbs, almond flour, corn flour or potato starch.
