The "Treat yo self": Shibui 10 year Bourbon cask delivers unforgettable refined bourbon notes, which is mind blowing considering its mash is comprised of 100% long grain rice
Kampachi is a perfect fish for dry-aging. Every fish benefits from some sort of aging, but the firm and creamy texture of Kampachi makes for an amazing mouthfeel. After 1 week of drying, its flesh starts to get a sausage-like consistency that we like to call "fish charcuterie"
