Creamy White Chicken Enchiladas
Ingredients:

2 cups cooked chicken, shredded
1 cup sour cream
1 cup shredded Monterey Jack cheese
1 can (4 ounces) diced green chiles
8 flour tortillas
3 tablespoons butter
3 tablespoons all-purpose flour
2 cups chicken broth
1 cup shredded cheddar cheese
1 teaspoon garlic powder
1/2 teaspoon onion powder
Salt and pepper to taste
Fresh cilantro, chopped (optional)
Directions:

Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking dish.
In a medium bowl, combine the shredded chicken, sour cream, Monterey Jack cheese, and diced green chiles. Mix well.
Spoon the chicken mixture evenly into the center of each flour tortilla, roll them up, and place them seam-side down in the prepared baking dish.
In a medium saucepan over medium heat, melt the butter. Stir in the flour and cook for 1-2 minutes until bubbly.
Gradually whisk in the chicken broth, continuing to stir until the mixture thickens and becomes smooth.
Stir in the shredded cheddar cheese, garlic powder, onion powder, salt, and pepper. Cook until the cheese is melted and the sauce is creamy.
Pour the cheese sauce evenly over the enchiladas in the baking dish.
Bake in the preheated oven for 25-30 minutes, or until the enchiladas are heated through and the cheese is bubbly and slightly golden.
Garnish with chopped fresh cilantro, if desired, and serve.
