It is with heavy hearts to share that our resident Therapy Dog, Sweet Sydney died peacefully in the laps of Keith and Carrie in her beautiful backyard.

To say that Syd was the best one is an understatement. She had an extraordinary life. When she came to us, she had puppies in her belly. Carrie and Cicely, delivered 9 beautiful babies. Syd was the best, most attentive Mama.

After all her children made it to their forever homes, Syd decided to pursue a career at the clinic. She greeted, loved, and said goodbye to every patient that entered our doors for over a decade. She retired last December. She continued her service, and took lots of naps in Carries home office.

Sydney’s favorite activities included camping, laying directly under the Slackline, paddle boarding, and enjoying meat snacks. She jumped for joy during dinner time for most of her life.

Sydney was the sweetest companion. She was full of love, and brought joy every day to everyone who encountered her. She will be missed, and remembered as the very best, most loving, good girl.

Today is Burrito Day!
The oldest historical mention of a burrito appears in 1895. The name is “little donkey” in Spanish, with a likely connection to the rolled packs donkeys once carried. The definition explained that a burrito was a “rolled tortilla, with meat or other food within.” Burritos became popular in Guanajuato and Guerrero before its popularity moved northward to the United States.
Modern burritos (flour tortillas stuffed with beans, rice, and salsa) originated along the San Joaquin River in California’s Central Valley before appearing on restaurant menus in the 1930s.
Today on National Burrito Day in Eugene, Burrito Girl is our favorite local place for Burritos. Myra Dunkel, owner and chef, was born in El Salvador. She has been cooking and rolling burritos from her purple-trimmed food cart for about 10 years. When she started, she worked another job during the evenings and made burritos at lunch. Now she is full-time at Burrito Girl. The food is all made from scratch, and she uses Organic Beans and Rice from Hummingbird. Her Salvadoran-inspired salsas are super fresh and vibrant, and help set these burritos apart from others! She also makes pupusas and gyros with flair.
Myra’s cheerful presence is so refreshing. She is happy to take orders via text (541-337-3998) and you can pick them up at 150 Shelton McMurphey Blvd, between the Hummingbird warehouses. You get your food to go on rainy days, and she has a great spot to sit and eat outside on sunny spring days.

Salad really can be the perfect meal!

What….a salad for a meal ?
Salad can be incredibly satisfying, keep blood sugar steady, and taste scrumptious!

Balancing the perfect salad can be so creative. As we launch into spring , and keeping true to eating with the season, salad is a solid option.

Lettuce is already becoming abundant in the garden, the building block of our delicious meal. Variety is the key, as all those beautifully colored leaves all have a different nutrient profile, while fiber being the common macro. The average American eats only 10 grams of fiber a day. This is certainly not even close to enough, as fiber is the main dish for our gut microbes. Shooting for 40 grams is a little more like it. Our microbiome thrives on all fiber. For instance, lettuce, artichoke, and beets all feed different species of microbes in our gut, sending essential messages to neurotransmitters, breaking down and absorbing nutrients, and supporting motility, so you have a positive bathroom experience.

Let’s get in the kitchen!

Lettuce of choice 🥬

Romaine, red leaf, frisée, and fresh bagged mix are the building blocks of our delicious meal!

Protein:
this time of year I especially like salmon, crab, and roasted meat, like lamb, steak, or seasoned tofu to name a few.

Veggies:
I commonly use shredded beets, or carrots, chopped celery, fennel bulb, red onion, either raw or pickled, green apple, or pear. Also roasted veggies like brussel sprouts, and sweet potatoes can be a tasty addition.

Crunchy:
Roasted pumpkin seeds, sunflower seeds, hazelnuts, pecans, any nut or seed works great, adds fiber and makes our microbes party! They are also a good source of fat, and protein.

Fat:
Olive oil is my personal go-to, some like avocado oil, but I also add feta, or cheese of choice, full fat yogurt dressing… you get the idea. The fat lubricates the digestive tract, moving fiber easily thru the system.

Ferment:
I always add some sort of ferment. It’s great for the gut, and adds the acidity balance every great salad needs. I like beet kraut, kimchee, sauerkraut, fermented pickles chopped, or olives. It adds a nice salty taste, and pairs perfectly with all other ingredients.

Then the glitter….
The magic is the addition of sprouts, either sunflower, broccoli, or spicy radish. And don’t forget flowers! They add a delicious taste, as well as beauty to your meal! Nasturtium, pansy, any flowering veggies from the garden, chive, mustard, they all add a little beauty, and flavor to the meal.

I like to pair my meal with a delicious mocktail made with a splash of apple cider vinegar, rose water and citrus of choice topped with sparkling water, and maybe a seeded cracker and a cheese slice, or sourdough bread with lots of butter.

You might be thinking, “Can I start PT right away, or should I see my Doctor first?”

For Medicare patients and most folks with private insurance, you do NOT need a referral to see a qualified PT. For those with federal or state-funded insurance plans, like OHP, a referral from a physician will be required. However for those of you who have already seen your doctor about your injury, a phone call is usually sufficient to get a referral sent over to us!
