A dance of Botanical Gin, Lemon, Bianco Vermouth, Curaçao & Absinthe. This is one of the year’s best barrel aged cocktails that we look forward to each season. Bright and citrusy with a spooky finish of absinthe only an oaky grave can muster. Come in and grab a cocktail before it dies, again.

Hey Neighbors! Ward 8 will be closed this evening for a private event. If you or someone you know is interested in making Ward 8 your bar for the evening do not hesitate to reach out to us in person or online.

Looking ahead we’re anticipating a busy Fall/Winter this year with Thanksgiving week and our Golden Anniversary coming up Dec. 12th! In order to not miss the action we’ve decided to take our Fall Break earlier than usual this year. We will be closed only this Wed/Thursday but are back in the pocket for Friday/Saturday next weekend.

September’s Barrel Aged Project is out!
The Rolls Royce is unparalleled when it comes seasonal transitions and wanting a stiff cocktail that goes down clean and light but with a little more maturity as we move into Autumn. We enjoyed this project so much last year that we’ve designated a barrel for this cocktail alone.
It’s beautifully unveiling the way a second round can evolve this classic cocktail even further Stirring them up until it’s gone!

July’s Barrel Aged Project is here!
If you’re privy to spirit forward cocktails but agave is your summer go to, the “Yellow Jacket” is your cocktail. The perfect blend of Reposado Tequila, St. German Elderflower & Yellow Chartreuse.
Resting it in our oak barrels for 100 days takes the sweeter edge off of this cocktail by adding that hint of tannic dryness to bring all those earthy and herbal flavors together perfectly.

**Next Barrel Aged Project cracking open tomorrow!**

The Tipperary! First appearing in a 1916 printing of “Recipes for Mixed Drinks” by Hugo R. Ensslin, this cocktail called for equal parts Irish Whiskey, Chartreuse and Sweet Vermouth; in Harry MacElhone’s 1922 book called ”ABC of Mixing Cocktails. We’ve tweaked the balance of this cocktail for the modern palate and rested this batch back in the beginning of December 2023.

Come join us this Friday for a taste of Irish history in classic cocktail form! As a reminder, we will continue to be releasing a new barrel aged project the first Friday of every month so come on by! We’re getting a head start for Fat Tuesday with this month’s Barrel Aged Project, the Baton Rouge! 🎭🎺🎉

Finished for 100 days in an ex Journeyman Bourbon barrel, this classic creole style cocktail showcases everything that makes Nola such a foundational influence in the world of classic cocktails. It’s a harmonious blend of Cognac, slightly funky Jamaican Rum & Sweet Vermouth w/ a healthy dose of Angostura & Peychaud’s Bitters. The finish of fresh lemon oil makes this cocktail sip so refreshingly delicious, it’s a blunder that it’s all spirit! Come taste it while lasts!

For this month’s Barrel Aged Project we’re celebrating the birth of Robert Burns! Barrel aged for 100 days, this cocktail is a classic cocktail that bears tribute to the life and words of Scotland’s most famous poet. We celebrate the author of ‘Auld Lang Syne’ with this dram of Scotch, Vermouth & Benedictine with fresh lemon oil to finish it off.
