Are you feeling hungry for some delicious ramen? Well, you’ll be happy to know that Ikkosha is the original creator of foam-based ramen. To prepare the soup, a mixture of pig skulls, backbones, and round bones are cooked in two large custom-made pots over high heat until they break down. To enhance the flavor, sweetness, and bone flavor, young soup and bones are added frequently. The foam-based soup was introduced in March 2004 by Kosuke Yoshimura, the founder of Hakata Ikkosha, who created it by combining the aroma of pork bones with fat and water. This creates fine bubbles that spread softly in your mouth, providing a light and sharp aftertaste that you can only find in this restaurant.
