Wonderful hike today! It's amazing how colors can pop in a landscape that seems dried and done for the season.

It's not just rice and beans. It's layers of tomatoes. Overnight soaked black beans made with baby Romas, garlic, and chili powder. Brown rice made with garden tomato salsa and harrissa. Topped with oven roasted cherry tomatoes with oregano. It's rice and beans.

Today's harvest and today's lunch: with the thinly sliced squash, cucumber, and radishes. What are you eating to stay cool in this heat wave?
Sourdough discard pancakes for a fluffy, decadent breakfast. I added wheat bran and h**p seeds for a little more sustenance. Topped with raspberries and blueberries with a touch of maple syrup. Extras are in the freezer for a quick warmup in the toaster. I think this may be my secret super power -> always make too much, so we can eat twice!

Shiitake mushrooms, sweet peapods, and broccoli stir fry with a bit of hoisin sauce. Always a quick and yummy meal. What is your go- to quick dinner?
