As y’all know, we’ve always been half baristas and half bartenders here at the workshops, which is a huge part of what makes working at Discourse uniquely challenging, and of course, uniquely fulfilling. We’re massive advocates for the development of drink makers of all sorts here in Milwaukee. We believe that the things we drink and the places we drink them are a huge part of our lived experience, and a crucial thread in the cultural fabric of our city.

In this spirit, our founder .castelaz has teamed up with Milwaukee Chapter President , bar director for .at.ardent, Johnny Hackney, legendary barman , and the one and only Rhondi Love, owner and operator of , to renew Milwaukee’s chapter of the !

The United States Bartenders Guild has been uniting and elevating the bar industry through education, community, and advocacy since 1948. Having a chapter here in Milwaukee would open the doors to a new wave of educational opportunities for Milwaukee drink makers, provide us a centralized platform for communication and collaboration, and put us on the map as a destination for drink lovers from all around the United States.

BUT, in order to become an official chapter of the USBG, we need 50 endorsements from Milwaukee based drink makers and drink enthusiasts! You do not have to be a professional, or be currently working at a bar, restaurant, or cafe, but you do have to hold a fervent love of the art and science of making great drinks and serving up great times.

Endorsing our chapter will take you less than a minute, and it could create a seismic move forward in our city. If you do one thing wild and out there thing today, make it smashing that link in our bio and endorsing our chapter!

The time is finally upon us, and this week madness descends upon our city as we welcome 50,000 guests for the RNC.

As the convention will make Milwaukee’s beautiful downtown a wild place to be, we have made the difficult decision to close our Downtown cafe from Monday - Thursday of this week. Above all, we value the health and safety of our staff. We appreciate you for your understanding, and cannot wait to welcome you again at our Downtown cafe this Friday, 7/19.

In the meantime, our cafe in Walkers Point remains open for service from 7:30am-4:30pm SEVEN DAYS A WEEK! Stop on by to get your fix, and if you haven’t already, to try this Radio only banger, Dissembler. This lil baddie has become one of our absolute favorite Summer drinks, a rapturous combination of *tea matcha, vanilla, Jamaican #2 bitters, and verdita, a lovely green juice hailing from Mexico composed of pineapple, mint, cilantro, and jalapeno. We charge this all up in our Perlini’s (carbonating cocktail shakers) and strain it over fresh ice for your immense refreshment.

AND we’re setup outside on our lovely patio, speaker system in tow (rocking two mono Marantz amps because hifi always), with a roaring fire, so you don’t even have to step foot inside. Tomorrow is a terrific day to give this baddie a go if you haven’t yet, the incredible Blue Star by . A symphonic combination of pickled blueberry juice and pickled blueberry skin sous vide meets a perfect match in house made juniper tonic, with the addition of a carbonated spirulina solution for both color and structure. Wildly refreshing and devilishly complex this is one of our favorite summer sippers.

WE OWE A MASSIVE THANK YOU to everyone who came out to our first ever BLOCK PARTY this last Saturday. It was a scorcher, and the city was buzzing with things to do, so we deeply appreciate everyone who took some time out of their day to come celebrate q***r creativity in our city with us. We love you, and we thank you!

Final shouts out to all of our collaborators who made this event possible! To who ideated, planned, and executed this entire event, you are absolutely fricking amazing! Des had never thrown an event like this one before, but I don’t think anyone could tell. Their commitment and communication was inspiring to behold, and we are all so proud of the event they created!

1.) Our block party is in JUST TWO DAYS! Over 40 vendors, food trucks, cocktails, the full works! We could not be more excited to party with you all, and celebrate a small slice of the magic that q***r creatives bring to our city. Another shout out to the inimitable for the graphics here!

2.) Speaking of celebration, today is our very own ’s birthday, AND our first official night of service for .mke. Come by tonight from 5:30pm-10:30pm for cocktails, beer, wine, and a damn good time set to a playlist of good ole rock and roll, from classic to contemporary. To help celebrate Anthony’s big day, we’re doing $2 shots of fernet and $4 spaghetts ALL NIGHT LONG. Come help us kill some of these bottles 😂🪩❤️

The Green Room is open Thursday & Monday [INDUSTRY NIGHT] from 5:30pm-10:30pm, and Friday & Saturday from 5:30pm-Late and shares a space with our cafe .

3.) and our SENSATIONAL pastry team just dropped a new menu at both cafes and it’s absolutely 🤤🤤🤤. We’re tossing a sneak peak on our story, but you really should just be getting into the cafes to taste them for yourself. Can anyone say Candied Bacon and Sage Kouign-Amman?! Yeah, we work with literal geniuses. ❤️🪩

There has been so much excitement in our orbit recently, it’s been hard to find the time just to share it all with you! This one though is extra special.

If you’ve been to our cafe , you know we have an incredible cocktail program designed by and Caroline White. After debating the topic for several months, and piloting a full daytime cocktail concept, we’ve made a huge decision!

WE’RE GOING TO BE OPEN AS A NEIGHBORHOOD BAR AT NIGHT (in addition to our new day time coffee hours of 7:30am - 4:30pm).

THE DRAGONFLY EFFECT | thai tea concentrate | fractional peach-ginger kombucha syrup | carrot & sweet apricot kernel milk | orange blossom saline | mango boba

The Dragonfly Effect is our modern interpretation of a traditional thai iced tea, one that could only come from the brilliant mind of . While the base is a traditional thai black tea, its surroundings have been given the full Discourse treatment.

For the sweetness, Alanna worked with the incredible team to create a custom peach-ginger kombucha which we freeze distill into a concentrated “syrup” of sorts by taking just the first 40% of the thaw for this use case. The remaining kombucha water is repurposed as the base of our welcome spritz for our cocktail lounge .mke. Alla, co-owner of RA!, started America’s first craft kombucha company before moving on to other adventures, and finally landing at RA! It was a joy and an honor to work with her.

For the milk, we use a blend of fresh carrots and sweet apricot kernels for a round, earthy flavor that explodes with a flavor of ripe stone fruit. The carrots also provide the requisite orange coloring for the drink without the use of added dye.

Finally, orange blossom water is turned into a saline solution and bursting mango boba is added to the bottom of the glass, both bringing this experience all the way over the top.

We’re in love with this one, and we absolutely can’t wait for you to fall in love with it as well. Dragonfly Effect is available at BOTH cafes through the end of July 🧡

This conversation, moderated by the one and only .castelaz, will focus on coffee’s evolution over the last twenty years, specifically as it relates to innovation, q***r creativity, and representation. Veterans of most of Chicago’s finest coffee institutions, Kristina and Celia come with an insane amount of experience and industry insight, and we could not be more excited to welcome them to the cafe for this discussion.

We first encountered Emmitt and were absolutely blown away by his ability to freestyle, melding stylistic influences from seemingly dozens of genres into a cohesive jazz rap tapestry. Our sister concept .mke, the nation’s first fully hybrid cocktail bar (where every cocktail is available both alcoholic and non-alcoholic), drops their brand new menu TONIGHT AT 7:30PM!

In many ways, the Agency team feels like this is their first REAL menu, a collection of creative cocktails that stray further from the canonic templates the team had previously explored. Pictured are the Dominicana, a boujee take on a White Russian, Agency’s take on a Pina Colada, clarified with toasted coconut yogurt, and the now infamous Verdita Margarita, offering layers of pineapple, cilantro, jalapeño, and mint alongside the usual suspects of tequila, agave, and orange.

We’re SO FRICKING EXCITED to start sharing this menu with you all!!!!! There has been so much happening in our world, so apologies for the delay on the photographic enjoyment, but we wanted to kick things off with a BANG.

Enter Fuori! (Out!), ’s incredible contribution to The Gay Agenda. At its heart, Fuori! is a liquid cannoli, like waking up in Piedmont with nothing but time and sunshine on your back. Waves of indulgent pistachio are offset by floral and enlivening orange blossom, while a lightly sweetened whipped ricotta tempered by Angostura chocolate bitters completes the picture.

To really turn this one up to 11, we use agar agar and cold oil to create modernist caviar from maraschino cherry juice, tucking it inside a cannoli shell for a wildly textural crunch and burst experience that simply needs to be tasted to be fully understood.

Fuori! (Out!) is available at both cafes now! We’re so proud of Noelie for this one, and are so unbelievably honored to provide a platform for such talented drink makers. ❤️

MEET EVAN SZYMKOWSKI! (they/them)

If you have a TikTok and live in Milwaukee, you’re probably been graced with Evan’s creative work. Evan and their team of content creators (who all hold different, more formal roles within MPL) have created a new paradigm for promotional content of publicly held institutions nationwide, transforming into a TikTok icon that has generated millions of likes and garnered a following of over 125,000 subscribers.

If you’ve found yourself wondering who’s responsible for this magic as often as we have, you won’t want to miss our public forum with Evan this Saturday at 7:30pm at our cafe!

Viral: TikTok & Creating Q***r Culture will be moderated by our very own (they/them), and will focus on q***r representation in institutionalized settings, as well as the unique super powers of q***r creators. Evan will share stories of their work at MPL, and attendees will have a chance to ask any and all questions related to their content, process, and the origin story of how all of this came to be. A curated selection of beer, wine, and cocktails will be available for purchase.

Your support of The Gay Agenda has been astounding, and we are so grateful to be able to offer drinks like these to y’all at the cafes! Huge shouts out to our Drink Innovation team for all of the work they put into these creations, and to our cafe teams for everything they do on a daily basis to keep these drinks stocked and ready to rock. It is a Herculean effort to prepare and maintain stock of over 20 prepped ingredients, in addition to everything they already do! We truly have the greatest teams in the world.

Kicking off the month, we have two open forums designed to raise the public consciousness of the q***r experience, led by q***r creators in both institutional and hospitality settings. Our dear friends are hosting Gay & Flashy, a Pride themed TNT, here at the cafe on Thursday, June 20th, and we’re finishing off the month with a massive, closing off the street and calling everyone we know block party on June 29th, celebrating q***r vendors, food trucks, and musical entertainments.

Extremely grateful to the one and only from for coming in to lead a Macaron workshop for our pastry team last week! Sam has been a dear friend of Discourse for a long time now, and it was such an honor to have them over to the bakery to share their knowledge and passion with our team.

Sam’s company, Midwest Sad, enjoys mixing emo nostalgia and decadent desserts, yielding an array of unbelievable baked goods and patisserie that really grab you by the heart strings and pull you in for more. Her talent and passion is so evident in each and every bite of her team’s work, and it is a profound treasure for Milwaukee.

THE GAY AGENDA.

The menu is a special one for us. An in depth exploration of q***r icons and traditions throughout American history, The Gay Agenda seeks to share the stories that have come to define q***r culture.

Our team here at Discourse is largely q***r. The radical love, openness, and compassion that they bring to the cafes is sheer inspiration, and serves as the backbone of our organization. We’re hosting several events over the next six weeks to further explore the q***r experience, and we hope you can join us in these Pride month celebrations.

And fam, outside of all the ooey gooey love we have for this team, these creations are just absolutely kick ass. Our whole drink innovation team snapped on these, and you can taste how much these drinks mean to their creators. This is a menu you absolutely do not want to miss.

It’s with sadness that we announce the cancellation of our Live Art Party tomorrow night. Circumstances beyond our control have forced our hand, and while it deeply saddens us to cancel, we know it’s the right decision.

That said, our brand new experimental menu DROPS TOMORROW AT BOTH CAFES!!! This is by far the largest (SEVEN NEW DRINKS) and most ambitious (caviar, fire, ice cream, fermentation, spherification, all of the things) experimental menu we have released to date, and we assure you it is staggering. A menu like this simply could not exist without an insane amount of work from our full drink innovation team, and we are so proud of each one of them.

RHUBARB RED | *tea hojicha | oat milk | rhubarb syrup | orange bitters | disco inferno | saline solution | rhubarb, strawberry, and olive salt | orange “pick”

Rhubarb Red was one of Les Paul’s early monikers, and the inspiration for ’s phenomenal tribute to the storied inventor of modern rock n’ roll. While the electric guitar has come to embody an endless cornucopia of sonic possibilities, the harsh, distorted power chords and flangy, pitch shifted solos that built rock n’ roll were not Les Paul’s original intention. Originally constructed for his early sound, Rhubarb Red was inspired by the early days of the electric guitar, which bore more in common with the relaxing throws of R&B than the rollicking riffs of rock.

rhubarb joins *tea hojicha (think toasted matcha) for a robust base that offers layers of toasted buckwheat, tart rhubarb, and gently spiced honey.
