Vermont Coturnix Quail, served in 2 services.
1st: Quail breast steamed with a chicken mousseline, then roasted over a quail jus served with Maitake mushroom and chervil oil.
2nd: A phyllo dough tartelette filled with the confited quail legs, finished with shaved black winter truffle.

Maine lobster tail and claw poached in lobster butter. The claw is served roasted in fresh butter and dusted with tarragon powder over crispy pommes anna and finished with a choron sauce.
Bluefin Tuna - Vadouvan - Avocado
Massachusetts bluefin tuna, grilled tataki-style, served with a light vadouvan mayo and finished with piquillo pepper coulis, Amalfi lemon gel, micro cilantro, and avocado foam.
