Have you heard of saimin? It’s a noodle soup found in Hawaii.
The dish is said to have developed during Hawaii's plantation era, a time when many Chinese, Japanese, Korean, Filipino, and Portuguese went to Hawaii to work the fields there. According to popular lore, these plantation laborers would share communal meals and at some point, they combined everything into one pot (Chinese noodles, Japanese dashi, Portuguese sausage, etc), thus leading to the creation of saimin.
Nowadays, you can order it at restaurants that specialize in it, like . However, it’s also such a part of Hawaiian culture that you can even find a fast-food version at places such as McDonald’s (swipe to see their version).

Buddae Jjigae is a popular Korean dish, though it has a complicated history that not as many people know about.
As wrote in his caption to this photo, “When Korea was super poor, and the country largely depended on American military force, many people smuggled food from American military bases. There were lots of processed ingredients like a hot dog, spam, and baked beans. These Western ingredients were put in a pot with Korean spice and kimchi to feed hungry families.
As typical Western ingredients like spam, Vienna sausage, and baked beans (from a CAN!) get stewed with Korean seasonings, they unleash incredible flavors and create a delicious synergy✨”

is a Trinidadian-Chinese restaurant in the Crown Heights neighborhood of Brooklyn, NY. They’re known for their currant rolls, doubles, various roti, and their house special (which contains chicken, lo mein and fried rice).
In the mid-to-late 1800s, the British brought over indentured servants from India and China to work on the sugar plantations in their Caribbean territories. As the Chinese assimilated into Caribbean life, one of the things they did was to combine their foods with the local spices and ingredients, which eventually led to creation of Caribbean-Chinese food.
