We’re celebrating by honoring one of the biggest cheese lovers out there: our very own 5 Spoke Creamery owner and cheesemaker, Alan Glustoff.
Originally a food scientist specializing in dairy cultures, Alan spent a summer working for Unilever in Holland, where he grew his passion for raw milk cheeses. Fast forward to today, Alan brings the same philosophies and techniques to cheesemaking: small batches, European-style aging, and big flavors.

5 Spoke Creamery’s Welsh Cheddar is our youngest cheese, aged approximately 3 months, and a fan favorite! An ultra creamy washed-curd cheese with a distinctive flavor somewhere between a Caerphilly and a young Cantal, welsh cheddar is sweet and nuanced.
We often describe the experience of unwrapping a block of Welsh Cheddar as reminiscent of prepping to bake; the rush of its buttery aroma is bold and inviting.
