We are deeply saddened to announce the passing this weekend of staff member, Ernesto Sanluis. Ernesto has been an essential part of our team for the past four years and he will be missed by all of us.

Le deseamos alivio y resignación a sus familiares y lamentamos profundamente su pérdida.

Ernesto, que tu viaje sea ligero, ya sin el peso de las tragedias de esta vida y, puedas descansar tranquilo. Muchas gracias por compartir tu talento en la cocina y tu naturaleza jovial y amable con nosotros.

We ask a bit of patience as we make adjustments in the kitchen. Ernesto and Gloria have been responsible for maintaining the recipes and quality of our food. Gloria, whom many of you know, was not just his co-worker, but also his girlfriend. She will need time to process and grieve, before she’s back with us.

This event has been painful and difficult on our staff. We will be closing today, Sunday, July 7th to honor Ernesto’s memory. We have also asked Gloria to let us know ways in which we can help economically as we and customers have expressed the desire to help. We will announce and coming fundraising, or events to offer support. Gracias

Mexican bakers took inspiration from the French, during the occupation of Mexico in the 1860s. That was the origin of the bolillo bread used in tortas, which we bake in house ❤️
