Did someone say breakfast cake? Oats, berries, and nuts packed into this breakfast bake make mornings something to get excited about, especially with a dollop of creamy yogurt and a nice sprinkling of cinnamon on top.
Blueberry Oatmeal Breakfast Cake
Serving: 8
Ready in: 30-60 minutes
Ingredients
1 1/3 cup almond flour
3/4 cup quick-cooking oats
1/3 cup Monk Fruit Sweetener
2 teaspoons baking powder
1/4 teaspoon salt
3/4 cup almond milk
1/4 cup vegetable oil
1 egg, beaten
1 cup frozen blueberries
1/2 cup chopped nuts, optional
Directions
Preheat oven to 400 degrees F. Grease an 8-inch round or square baking pan and set aside.
Combine the almond flour, oats, Monk Fruit Sweetener, baking powder, and salt in a mixing bowl. Stir to combine.
In another bowl, whisk together almond milk, oil, and egg. Add the egg mixture to the flour mixture. Stir until the batter is just combined (it will be lumpy).
Gently fold in the blueberries and nuts (if using).
Pour the batter into the prepared baking pan. Place in the oven and bake at 400 degrees F for 20-25 minutes or until the top is golden brown.
Remove the pan from the oven and place on a wire rack to cool for 5-10 minutes. Serve warm.
Store leftovers in an airtight container at room temperature for up to 3-4 days.

Blueberry muffins are a family favorite, and this recipe won’t disappoint. This gluten-free blueberry muffins recipe is absolutely delicious, healthy and so easy to make.
INGREDIENTS
• 2 cups almond flour
• 3 eggs
• ⅓ cup Sugar Free Maple Syrup (Monk Fruit Sweetener)
• ½ teaspoon baking soda
• pinch of sea salt
• 1 teaspoon vanilla extract
• 5 tablespoon coconut oil, melted
• 1 cup fresh blueberries
INSTRUCTIONS
1. Preheat oven to 350 degrees F.
2. In a bowl, combine almond flour, baking soda and sea salt.
3. In a separate bowl, combine eggs, honey, vanilla and coconut oil/ghee.
4. Combine both mixtures together. Once well incorporated, add blueberries and mix.
5. Fill a muffin pan with liners. Fill each liner with batter.
6. Bake in oven for 15–20 minutes.

In folk medicine, rosemary has been associated for centuries with having a good memory. The plant takes its name from Rosmarinus, a Latin term meaning sea dew. Ros (meaning dew) and marinus (meaning sea), which translates to dew of the sea or sea dew. According to Greek methology, rosemary was draped around the neck of Aphrodite as she rose from the sea, and hence the name dew of the sea.The Rosemary plant not only smells nice and looks nice when growing in our garden. It also appears that it increases our brain power.

A study published in the Psychogeriatrics journal found that rosemary oil aromatherapy can boost memory, prevent and slow Alzheimer's disease in 28 elderly patients with dementia and Alzheimer's. Rosemary has also been associated with relieving stress and anxiety. One study suggests that rosemary, combined with other pleasant-smelling oils, may lower cortisol levels and help reduce anxiety.

Citrus Mango Sorbet
Serves 4
Ingredients:
• 2 cups chopped mangoes
• 1 avocado, peeled and seed removed
• ½ cup lime juice
• 8 drops Tangerine Vitality essential oil
Procedure:
1. Place all ingredients in a blender and process on high for 30 seconds or until smooth.
2. Pour mixture into a stainless steel bowl. Cover bowl with plastic wrap and freeze until crystallized, about 3 hours.

Spicy Potato Salad Recipe
Ingredients
• 6 medium-sized gold potatoes, peeled
• 4 tablespoons olive oil
• 2 garlic cloves, minced
• 2 drops of Coriander Vitality™ Essential Oil
• 1 tsp crushed red pepper flakes
• 2 tsp ground turmeric
• 4 drops of Lime Vitality™ Essential Oil
• 1 drop Black Pepper Vitality™ Essential Oil
• 1 cup dried Wolfberries
• 1 packed cup chopped fresh cilantro leaves
• 1 packed cup chopped fresh parsley leaves
• 1 packed cup chopped fresh dill
• Salt and pepper
Instructions
• Peel the potatoes and place them in a large pot of boiling water. Cook for about 10 minutes until soft, but not mushy.
• Drain the potatoes, dry them, and cube them.
• Heat 2 tablespoons of olive oil in a cast-iron skillet on medium. Stir in the garlic, red pepper flakes, and dried wolfberries. Cook for 2-3 minutes then add the turmeric.
• Toss in the potatoes and mix well to coat. Add the fresh cilantro, parsley and dill. Cook for 4 more minutes.
• Remove from heat. Mix 2 tablespoon of olive oil with all the Vitality Essential Oils. Drizzle over the potato salad until fully mixed.
• Add salt and black pepper to your taste.
• Top with more red pepper flakes and the remaining fresh herbs.
• You can serve this potato salad warm or at room temperature.

Lotus is widely cultivated in the Asian continent (mainly China) as one of the important economically important crops for its rhizome and seeds. In the last decade, seeds from lotus seeds have emerged as one of the important sources of major nutrients and phytochemical compounds.

Lotus seed possesses many important components that could be processed further in food product formulations and other applications. Exploring new sources as a functional ingredient for value-added food product development claims enhanced nutritional and functional properties of products. Flour and starch are important ingredients in the food industry. To formulate new products, flours and starches with specific characteristics must impart functionally desirable properties. In bakery products, wheat flour is used as the basic raw material. However, research has now shifted to partial or full replacement of wheat flour with other substitutes that are both nutrient-rich and health-benefiting in nature.

Lotus ((Nelumbo nucifera G.) is also known as water lily, sacred lotus, and Kamala. It is an aquatic perennial flower with one aquatic genus Nelumbo which accommodates Nelumbo nucifera (cultivated) and Nelumbo lutea (Wild) species. The genus is found throughout the Asian continent (China, India, and Russia) and in Northern parts of Australia and North America. In Asia, lotus is cultivated for nutritious rhizomes, leaves, and seeds and is being used as a food for 7000 years. Due to its important nutritional properties, it is one of the important economic crops of China, producing 45,000 tons of lotus seed and 9 million tons of fresh rhizomes. Traditionally the extracts of the leaves, rhizomes, seeds, flowers, roots, and buds were used to treat diarrhea, cardiac ailments, depression, insomnia, cancer, and hypertension.
