We're rounding out this week with our newest partner . and have been part of Cinnabar since year 1, and when we needed a last-minute venue for November they jumped right in. It's been great to circle up at CREDO these past months, and a little reminiscent of our year 2 days in College Park. This year we’re thankful for a lot of things. One of the wildest things that happened to us this year was the way our community (that’s you!) rallied around us in our time of need. About two months ago, I (Nate) put out a call for aid on social media. The message was picked up by folks all across the country by people who shared it and helped out by buying coffee. It was phenomenal to see our community turn out for us that week and I wanted to take this opportunity to share with you how your purchases and continued support of our company have impacted us for the better.
Buying coffee is a big deal; here’s how it helped us recently. The stir caused on social media by everyone sharing our story brought a sustained momentum to our cafe on Orange Ave, so much so that we've been busier in the past two months than ever before! I’ve been working long hours to keep up with our growth, and through our sustained success we’ve been able to double the size of our crew. Now our operations are more smooth and effective on the back-end as well as allowing us to provide a better experience for you when you come to visit us. We’ve been able to give much needed raises to our long standing employees and bring our new hires in at a starting rate higher than what used to be our ceiling, raising our average wages by 45%. Next, we’ll be expanding our kitchen hours into Monday and Tuesday starting in December!
Outside the cafe, the influx of online orders helped us get caught up with some outstanding bills that were haunting us from the year’s turmoil. It also set us up to make some much needed improvements in the cafe and reinvest in the company in some keys ways as we move towards greener pastures and settle beside still waters.
We quite literally would not have made it this far without you and your participation in the work we do by completing the supply chain that connects you to the farmers we support across the globe. Your purchase will have big impacts on us this holiday season as we undergo more changes in the coming months; we’ve got some exciting announcements on the way. In the meantime though, we’ll be shutting down our website on December 1st for some maintenance. We aren’t sure how long it’ll take to get it back online, so if you want to ensure you’ll get your coffee for the next few months we encourage you to check out our 3-6 month subscriptions! We think buying coffee is a big deal, and so is our environment. Coffee comes across gulfs and oceans to us in GrainPro bags (plastic bags that protect the green coffee from the elements) inside of jute sacks (pictured). Our production team keeps every GrainPro bag in order to re-use, reduce, and recycle them.
While we recognize that systemic change is the only recourse to effective environmental protection, we believe that it’s the small decisions we make that form who we are as individuals and collectives and can build the momentum to change the world around us. So we re-use our GrainPros and you get to name a price for coffee at our shops. It may be small, but it’s a big deal.

This is our featured peaberry coffee from the Liwani Estate in Nakuru, Kenya and we can't get enough of it.
Did you know that peaberry seeds are a genetic defect in coffee? Normally, each coffee cherry grows two seeds inside of it but sometimes the genetic code only forms a single seed inside the cherry, and that's a peaberry! They are easily identifiable by eyesight because they don't grow with a second seed next to it and are therefore fully rounded without a flat side. Peaberries have a very distinct effect on the flavor of the coffee that when left commingled with the rest of the crop is considered negative. However, when they are isolated from the rest of the crop and grouped together like this, together they create a wonderful cup that is wholly unique from the standard coffees in the main crop.

For 12 years all of our coffees here at Downtown Credo have been sourced through direct trade relationships. These two new coffees we released last month are no different.
In fact Peter, the farmer from the Liwani Estate in Nakuru County Kenya, personally delivered his 60 kilo sacks of peaberry coffee directly to our warehouse here in Orlando.
The first natural process coffee we've featured is sourced through a friend and colleague of ours who works with the NGO Life Monteverde in Puntarena Costa Rica.
