Scallop Crudo with ajo blanco, mint oil, Marcona almonds & grapes

Gabernik 23- This Slovenian Merlot sparkling rosè comes from the vineyards of Janko Bogatic, a man who was pursuing a career in dairy farming before returning to takeover his family’s vineyards. Bright raspberry cherry and sage notes with smooth bubbles.
Amaro Eroica- This Calabrian amaro is the current staff favorite. It showcases all parts of the Mediterranean with Calabrian and Sicilian citrus, licorice, gentian and cinchina among the ingredients. It hits all parts of your palate as you drink transforming from salty, to sweet to bitter and back again.
S&B Borgogne- This Nebbiolo’s first vintage was a collaboration with a film release. “Truffle Hunters” documents the relationship between a group of old iItalian men and their dog companions while searching for white truffles in Piedmont. Subsequent vintages have featured stills from the film. Hints of blood orange, mint and a nice tannic finish.
Chateau du Petit Thouars- Named for the countless Georges going back generations that have been making this wine. Sebastian (George) du Petit Thours produces this excellent Cabernet Franc from the Chinon region, with white pepper and crunchy red fruit notes balanced by tannin and acidity.
Mas Perdut- Lovingly referred to as a our Cava pet nat due to the grape makeup of Macabeo and Xa-relo Vermell this Spanish bubbly is a complex treat. Dry with notes of hay and earthiness the tiny bubbles keep you wanting for more.
Brutal!- This wine label started by two Catalonian and one French winemakers and misunderstanding the American habit of calling wines dope. After the Catalonians described the Frenchman’s wine as Brutal! And explained it was a good thing not calling his wine garbage the label was born. A project amongst winemakers worldwide the only specification is the wines must be 0/0, 0 things added to the wine and 0 things taken out.
