Another New Pasta 🍝 on the menu! Maccheroni alla Chittara with a Dry Aged Guinea Fowl ragu. Made with white wine braised Guinea Fowl, slowly cooked with red onion, fennel, fennel seeds, crushed chili, dry porcini mushrooms, San Marzano tomatoes, sweet peppers, capers, taggiasca olives, nepetilla & parmigiano. These birds are incredibly flavorful!!
