I’ve been making fried rice since I was 6 years old. My dad taught me the way we made it at our restaurant, and that method has stuck with me. Over the past 15 years, I’ve learned two other methods; one by Charlie Phan (Slanted Door) and the other Gordon Ramsay.
This new method involves separating egg/yolk and mixing the yolk with the cold cooked rice, while making a hot-oiled pan mirepoix and then adding the beaten egg whites to cook. After the egg whites start to firm up, add the yolk-rice and cook thoroughly, while adding the cooked protein at the end (I also have leftover Kalua Pork which I’ve made into fried rice many times). Salt & pepper to taste.
I was blown away the first time, and blown away even more the second time.

If you don’t know what it is… it consists of poaching 1 whole chicken in a bath with ginger, garlic and green onions and served with: rice made from the chicken fat, oil, garlic, shallots, and some of the chicken bath simmering liquid (broth), sauces (usually two or more), and a bowl of broth on the side.
