Have you ever wondered....what is Physical Therapy and what do they do there? South Valley is an out patient orthopedic clinic..and here is the official definition...Orthopedic physical therapists diagnose, manage, and treat disorders and injuries of the musculoskeletal system including rehabilitation after orthopaedic surgery. This specialty of physical therapy is most often found in the out-patient clinical setting. Orthopedic therapists are trained in the treatment of post-operative orthopedic procedures, fractures, acute sports injuries, arthritis, sprains, strains, back and neck pain, spinal conditions, and amputations.
Joint and spine mobilization/manipulation, therapeutic exercise, neuromuscular reeducation, hot/cold packs, and electrical muscle stimulation (e.g., cryotherapy, iontophoresis, electrotherapy) are modalities often used to expedite recovery in the orthopedic setting. Those who have suffered injury or disease affecting the muscles, bones, ligaments, or tendons will benefit from assessment by a physical therapist specialized in orthopedics. California has "limited Direct Access" so you can see a physical therapist for 12 visits within a 45 day time period without having to get a prescription from your physician. This colorful Vegan Ramen Noodle Salad is perfect for BBQs, potlucks or even to brighten a regular meal. It's so easy to make, healthy and a fun twist on lunch or dinner.

Ingredients
Ramen Noodle Salad
1 pack (8oz) ramen noodles cooked, just slightly al dente
3 cups red cabbage shredded
1 cup carrot grated
5 scallion stalks sliced
1/4 cup slivered almonds
Dressing
3 TB warm water
1/4 cup smooth peanut butter (room temp pb makes it easier to whisk) I used raw unsalted almond butter.
1/2 lime juiced
3 TB apple cider vinegar (I used white rice wine vinegar)
2 TB maple syrup
2 TB tamari or soy sauce if not gf
1/2 tsp garlic powder
1/2 tsp onion powder
Instructions
Add all salad ingredients to a large bowl.
In a separate bowl, whisk salad dressing ingredients. If the dressing is too thick for your liking, feel free to add a little more warm water until you get the consistency you desire.

This easy Penne Alla Vodka recipe is so rich, creamy and decadent that you’ll be surprised it’s totally vegan! Perfect for any occasion as it only takes 20 minutes to make and will impress any guest with its insatiable spectrum of flavors. Vegan and nut free recipe.
INGREDIENTS
• 18 Oz. (500g) penne or rigatoni pasta
• 1 tbsp. extra virgin olive oil
• 2 medium red onions, diced
• 2 cloves of garlic, minced
• ½ cup (4 Oz. / 115g) tomato puree
• 1 tbsp. vodka* See notes
• 1 cup (250ml) plant-based cream**
• ¼ cup (60ml) plant-based milk
• 2 tbsp. nutritional yeast
• ½ tsp. salt or more to taste
• ½ tsp. ground black pepper more to taste
• 1 tbsp. red chili flakes (optional)
• 1 red chili pepper, thinly sliced (optional garnish)
• Handful of fresh basil (optional garnish)
INSTRUCTIONS
1. First step is to cook your penne or rigatoni pasta according to the package directions.
2. In a pan over medium-high heat, add a tablespoon of extra virgin olive oil, the onion and garlic and sauté until translucent (approx. 3 minutes).
3. Then add in the tomato paste, stir well into the onion and garlic and cook for another 3 minutes. Stir occasionally.
4. Next, add in the vodka, plant-based cream and plant-based milk and stir together well. Continue to cook until the sauce starts to thicken (approx. 5 minutes). Stir occasionally.
5. After this time, add the nutritional yeast, red chili flakes, salt and pepper into the sauce and stir together well. Continue to cook for 3 minutes.
6. Now add the cooked pasta into the pan and mix until each single pasta is nicely coated. At this time, you can add any red chili peppers and fresh basil that you desire: either mix it into the pasta whilst warm or garnish freshly on top for that restaurant quality look!
NOTES & NUTRITION:
* For a vodka-less pasta, you can add in a squeeze of lemon juice and a splash of fresh water. Alternatively, you can simply leave it out.
** If you do not have any plant-based cream on hand, you can substitute this with full fat coconut milk (approx. 1 cup (7 Oz. / 200g))
TO STORE: Leftovers can be refrigerated in an air-tight container for up to 5 days. You can also freeze the vegan creamy pasta sauce in an air-tight container or freezer bag for up to 6 months. If frozen, let it thaw overnight in the fridge before reheating.
TO REHEAT: You can reheat this creamy penne alla vodka in pan over medium heat until warmed through (approx. 5 minutes). This pasta can also be reheated in a microwave.

Plant based Ravioli Lasagna Casserole
Serves 4 hearty eaters
Ingredients:
1 package Scoiattolo Grilled Vegetable Organic Ravioli (from Costco)
1 26 oz Jar Marinara sauce (I use Trader Joe’s Tomato basil)
1 Tbsp olive oil or 3 tbsp water (if avoiding oils)
5 oz spinach chopped
1 medium onion, chopped
4 medium carrots, diced
3-4 grinds of fresh black pepper
1 7 oz package Dairy free Mozzarella shreds (I use Trader Joe’s Cashew Mozzarella)
In a large pot bring salted water to boil and par boil the ravioli (2-3 minutes) drain and set aside.
In large skillet heat oil or water. Add onions and carrots and sauté for approx. 7 minutes add spinach and 1-2 tablespoons water, stir and cook until spinach starts to wilt. Remove from heat, add pepper, stir and set aside.
Pre-heat oven to 375 ◦
In the bottom of a 2 quart casserole dish (7x 12) spoon about 1/3 to 1/2 cup pasta sauce, next add a layer of your ravioli, cover with your sautéed veggies, another ½ cup of sauce and about ½ the package of cheese. Add another layer of the ravioli, the rest of sauce and top with remaining cheese. Cover with foil and bake for 15 minutes, remove foil and bake another 10 minutes until cheese is melted and sauce is bubbling. Remove from oven and cool 5-10 minutes before serving.

Ingredients
For the lentil walnut meat:
▢1 cup walnuts
▢1 cup brown lentils (I save time by using Trader Joe’s pre-cooked lentils)
▢1 tablespoon olive oil
▢1/2 onion, finely chopped
▢1 tablespoon tomato paste
▢1/2 cup diced tomatoes
▢1 teaspoon cumin
▢1 teaspoon paprika powder
▢2 teaspoons oregano
▢salt
▢black pepper
For the vegan sour cream:
▢1 cup cashews, soaked for 30 minutes
▢1/4 cup lemon juice
▢1 clove of garlic
▢salt
▢black pepper
For the tacos:
▢1 tomato
▢1 avocado
▢lettuce
▢about 8 taco shells
Instructions
Cook the lentils according to the instructions. Drain and set aside. In a medium pan, roast the walnuts without oil for about 2 minutes or until they are lightly golden. Put the walnuts and the cooked lentils in a food processor and process until chopped. Make sure to leave some texture!
In a medium pan, heat the olive oil over medium heat and sauté the onions for about 3 minutes. Then add the lentil walnut mixture and stir in the tomato paste. Cook for 2 minutes. Add the diced tomatoes and the spices (paprika powder, cumin, oregano, salt, and pepper).
Make the sour cream: Drain the cashews and put all ingredients in a food processor and process until smooth. Season with salt and pepper.
Fill the taco shells with the lentil walnut meat, tomato, avocado, and lettuce and top with sour cream

8 ways to get started with a plant-based diet
Here are some tips to help you get started on a plant-based diet.
Eat lots of vegetables. Fill half your plate with vegetables at lunch and dinner. Make sure you include plenty of colors in choosing your vegetables. Enjoy vegetables as a snack with hummus, salsa, or guacamole.
Change the way you think about meat. Have smaller amounts. Use it as a garnish instead of a centerpiece.
Choose good fats. Fats in olive oil, olives, nuts and nut butters, seeds, and avocados are particularly healthy choices.
Cook a vegetarian meal at least one night a week. Build these meals around beans, whole grains, and vegetables.
Include whole grains for breakfast. Start with oatmeal, quinoa, buckwheat, or barley. Then add some nuts or seeds along with fresh fruit.
Go for greens. Try a variety of green leafy vegetables such as kale, collards, Swiss chard, spinach, and other greens each day. Steam, grill, braise, or stir-fry to preserve their flavor and nutrients.
Build a meal around a salad. Fill a bowl with salad greens such as romaine, spinach, Bibb, or red leafy greens. Add an assortment of other vegetables along with fresh herbs, beans, peas, or tofu.
Eat fruit for dessert. A ripe, juicy peach, a refreshing slice of watermelon, or a crisp apple will satisfy your craving for a sweet bite after a meal.
