When you get past the funny name, the slurping noises, and the visual likeness of "coffee soup" you can see that cupping is a critical, fundamental process of evaluating coffee.

Coffee cupping, also known as coffee tasting, is the practice of observing the tastes and aromas of brewed coffee. It's a professional practice but can also be done by enthusiasts and consumers interested in exploring coffee's complex flavor profiles. The process involves several steps to ensure a consistent and objective evaluation of the coffee beans:

Grinding: The coffee is ground to a medium consistency, similar to sea salt. The grind size is important to ensure that the extraction rate is ideal for tasting.

Smelling: Before brewing, the ground coffee is smelled to assess its fragrance, which can indicate quality and freshness.

Steeping: Hot water is poured over the ground coffee and allowed to steep. During this time, a crust of grounds forms on the surface, and participants are encouraged to smell the coffee by breaking the crust. This releases a burst of aromas.

Slurping: The coffee is then tasted, usually with a deep slurp. The slurping action is meant to aerate the coffee and spread it evenly over the tongue to assess its taste accurately. Tasters evaluate aspects such as acidity, sweetness, body, and aftertaste.

Coffee cupping allows buyers, roasters, and baristas to assess different coffee beans' quality and characteristics. It helps in making decisions about purchasing, blending, and roasting, and also in ensuring a consistent product quality. It's also used as a way to enjoy and appreciate the diverse flavors that coffee has to offer, much like wine tasting!
