“This is a beautiful twist on a classic negroni created by Devan Lenning. The slight and pleasant peppery buzz sets this cocktail apart from other holiday drink recipes — as does the brilliant red color! Made with gin from Seattle’s OOLA Distillery and sweet vermouth from BroVo, this striking sip is just the right fit for any holiday celebration.”

INGREDIENTS
1½ ounces OOLA Barrel Finished Gin
¾ ounce Szechuan-infused Campari*
½ ounce Jammy Sweet Vermouth
2 dashes Sichuan Mary’s Honey Cocktail Bitters by
Orange twist and edible flower (optional), for garnish

DIRECTIONS
Add a large ice cube to a double old fashioned glass. Add gin, Szechuan-infused Campari, vermouth and bitters, and stir. Express an orange twist over the glass, and garnish with optional edible flower.

*SZECHUAN CAMPARI INFUSION
1 liter Campari
35 grams Szechuan peppercorns
20 grams pink peppercorns
10 grams black peppercorns

DIRECTIONS
Coarsely grind peppercorns and add to Campari. Infuse for up to 2 weeks, or until desired “buzz” level. Strain with a fine mesh strainer, and again with a coffee filter to remove small sediments.

We took a trip to Fremont and Luke our friend at The Barrel Thief whipped up a few cocktails featuring OOLA spirits. The first is called The Firing Squad! OOLA American Gin, Lime Juice, Angostura bitters and Giffard's Grenadine are the make up of this classic shake up.

Meet Liz Blacker - Executive Chef of our restaurant

Born and raised in the Pacific Northwest, Liz’s passion for hospitality began as a child learning to bake cookies with her aunt and delivering them to neighbors on Christmas Eve. After earning her culinary degree she obtained her bachelor's in hospitality management from South Seattle Community College. Her culinary expertise includes time as a Sous Chef at Cafe Juanita and later as Chef de Cuisine at Eden Hill Restaurant. Beyond her professional achievements, Elizabeth loves to use food as a means to connect with others, continually inspire guests and herself to keep trying new things. When not in the kitchen, you can find her immersed in books, spending quality time with her dogs Sirus and Violet, and tending to her jungle of plants.

We’ve been keeping a secret 🤫… Now we get to share it with you! This summer OOLA Distillery will be opening our Flagship Restaurant, Cocktail Bar and Bottle Shop called OOLA Capitol Hill! That’s right… we’re coming home baby! Just a block away on 14th and Union from where the original distillery began.

The production facility on Colorado Ave will be the home of our Tour Program and production HQ and you will always be able to stop in for a bottle and tasting… the family is just getting bigger!

Introducing the new OOLA Flagship Reserve Aged Vodka! The first of a two part collaboration w/ . The Flagship Reserve Vodka brings together the rich sweet white pepper notes of our Flagship Vodka with the creamy robust nutty flavors of Beecher's Flagship Reserve. It takes up to two years to bring this delicate artisanal vodka from cheese to glass. Beecher's Flagship Reserve Cheese spends up to 14 months aging in open air before being infused with our craft gluten-free vodka for an additional 10 months. The result is a Seattle made funky sharp cheddar style Vodka perfect for shaking up your dirtiest martini!

Whisky commonly refers to those distilled in Canada, Scotland and Japan and whiskey refers to those made in the U.S. and Ireland.

The Distillery Story

OOLA Distillery produces small batches of gin, vodka and whiskey. This is the real deal – spirits made with a sense of place and a connection to the people who grew the raw ingredients and the man who coaxed them into their more spirited forms. The goal is 100% use of Washington state people and ingredients from grain to glass: gins in which you can taste the botanicals, distinctive vodkas, and whiskey flavorful and smooth.

OOLA hosts an on-site distillery and tasting room with bottles available for purchase. Located adjacent to OOLA is 10 degrees, initiated and created by dancer and choreographer, KT Niehoff – it is the new home of KT’s dynamic performance company, Lingo Productions.

Kirby's Story

For OOLA owner and distiller Kirby Kallas-Lewis, OOLA is a labor of love, intellectual curiosity and commitment to the neighborhood he has called home for more than two decades. Kirby has been studying the art and science of distilling intensively since 2009. He has participated in numerous workshops, tastings, and conferences on the topic of craft distilling by some of the leaders in the industry. A former artist and tribal art dealer, Kirby has long been interested in the power that great food, wine, art, cocktails and entertaining have in connecting people to each other and to a place. Kirby is also in the development stage of a boutique hotel in the town of Waitsburg, WA, near Walla Walla – a quiet, inspiring and rejuvenating locale set against the Blue Mountains, surrounded by rolling wheat country along the southern edge of the Palouse Hills.
