Too nine 2022!! Happy new year!!
Blueberry frozen yogurt. Trying to keep summer going as long as possible with the amazing seasonal fruit! This is delicious.
Recipe:
- 3 cups fresh or frozen blueberries
- 1 cup sugar
- 2 cups whole milk plain unsweetened yogurt
1. Combine blueberries and sugar in a saucepan. Simmer until the berries release juice about 5 min.
2. Blend berries in a blender and then let them cool.
3. Once cooled add 2 cups of yogurt and stir. I choose unsweetened yogurt.
4. Add to ice-cream machine until desired consistency.
BlackBerry sorbet - so simple and delicious!!!
Recipe:
3 cups blackberries
1 cups sugar
Juice of 1 lemon
In a saucepan heat all the ingredients until sugar dissolves. Then simmer until blackberries are starting to dissolve about 5 minutes. Then strain the berries through a fine mesh to get all the seeds out. Chill. Pour into ice cream maker!

We have strawberries coming out of ears here. But they are so good. We are making smoothies, popsicle, muffins and just eating them straight. Here is a good one I just made they disappeared in a day.
Strawberry Scones -
2 cup all-purpose flourâ¨Zest of 1 lemon, finely gratedâ¨3 tbsp raw brown sugarâ¨2 tap baking powderâ¨5 tbsp cold butter, cut into small bitsâ¨1 cup fresh strawberriesâ¨2/3 cup milkâ¨1 large egg, beatenâ¨1 tbsp brown sugar for finishing
Heat oven to 400°F. Line a large baking sheet with parchment paper.
In a large bowl, combine flours, zest, sugar, baking powder. Add cold butter and work into the flour mixture until the biggest pieces are the size of small peas with either your fingertips or a pastry blender. Stir in milks then strawberries, mixing only until large clumps form. Use your hands to reach inside the bowl and gently (so gently) knead the mixture into one mass. The more you knead, the wetter the dough will get as the strawberries break up, so work quickly and knead only a few times, if you can get away with it. Transfer dough to a well-floured counter and pat into a roughly 1-inch tall disc. Cut into 8 to 10 wedges. Transfer wedges to prepared baking sheet, spacing them apart. Brush the tops of each with egg, then sprinkle with coarse sugar.
Bake for 15 to 17 minutes, until scones are golden brown on top.

Cook the sugar, water and lemon juice together, stirring occasionally until the sugar is dissolved. Cut up the watermelon and remove all seeds. Puree in a blender or food processor with sugar mixture. Wait for it to chill. Pour into ice cream maker per instructions.

Classic summer salad yellow âpineappleâ heirloom tomato salad with fresh buratta cheese. Drizzle with olive oil, balsamic vinegar, salt and pepper and add some basil. One of my favorites! What is your favorite summer salad?

Greek Lamb sliders - Memorial Day dinner idea!! These are some of my all time favorites for the grill or on the stove top with all the herbs in them. When I make these I make a huge batch and have them throughout the week. They store great and are easily heated up. Just add some yogurt sauce on top and ready to go. Always a hit! Recipe in profile.

One of our favorite new year eve traditions! We have a jar that we add memories throughout the year. Then on new year eve we go through the jar one by one reading each memory. We love it!! We have good memories, big ones, small ones, sad memories etc. but it just awesome going through them one by one, amazing how much you forget. I highly recommend starting this is you havenât already!!

Roasted Brussels Sprouts with bacon and grapes - my family only likes it this way. It took me years to figure out a recipe that the family would eat nobody liked any kind of Brussels sprouts until someone said have you tried it with bacon and grapes? I was very skeptical until I made it and itâs the only way I make it now otherwise I end up eating all the Brussels sprouts by myself. Itâs so easy to make a cut 8oz of bacon into smaller cuts fry it until medium done. Then in a pan cut about 1 lbs of Brussels sprouts into halves and also 1lbs green grapes into halves. Mix the bacon with the Brussels sprouts and grapes. Add a little bit of salt and pepper and you donât need any oil but if you do use some oil from the bacon. Then in the oven 350F for 30 minutes or until golden brown!! Enjoy!
When school is on we need simple dinner ideas!! One Pan Chicken Fajitas - Took me 10 minutes to put this together and throw in the oven. Took me another 10 minutes for the sides. But it was easy and delicious!
One Pan Chicken Fajitas
4 tbsp avocado oil
4-6 chicken breasts
2 red onions, sliced into wedgesÂ
3 peppers, deseeded and thinly sliced
3 cloves of garlic crushed
1 tbsp chili powder
2 tsp ground cuminâ¨2 tsp smoked paprikaâ¨2 tsp garlic powderâ¨1 tsp onion powderâ¨Â˝ tsp black pepperâ¨Â˝ tsp kosher salt to
Turn oven on 400F.
Place the chicken in a baking dish along with the onion, peppers and garlic, add oil and spices to the tray and mix it all around. Place in the preheated oven for 30-35 minutes until the chicken is cooked through and veggies are golden. Tossing halfway through so that everything is evenly cooked.
Once fully cooked slice up chicken and vegetables and serve with warm tortilla, Guacamole, salsa, sour cream and some lime.

Raspberry lime popsicles!!! Itâs heating up in Seattle and we are continuing our popsicles series.
Recipe:
2 cups raspberries
2 tbsp like juice
3 tbsp sugar
1 cup milk or dairy of your choice
Boil the raspberries, lime and sugar until the sugar is dissolved. Use a strainer and strain the sauce to discard all the seeds. Add milk to the mixture and stir. Then add it to popsicle molds! Enjoy!
Strawberry Creamsicles is something we all need during these times!! They are easy so easy to make!
2 cups strawberries and 1 cup heavy cream or half and half. Mix in food processor and add to your popsicle molds!! These are so easy and delicious!! Enjoy!
**If you want to make them sweeter boil the strawberries with 3tbsp of sugar and then add the cream!

Cherry popsicles - omg these are some of the most delicious popsicles I have made. I was so tired of taking the pit out of the cherries so I decided to boil them with 1/4 cup water until they fell apart so it would be easy to remove the pits via a sifter. Once I remove the pits I put the soft cherries in a food processor and then into popsicles molds. And wow!! Just amazing!!
Strawberry Lime and Mint Popsicles!! So easy to make and customize with any fruit. You can even make it with basil! Delicious!
Strawberry Lime and Mint popsicles
Makes 6 popsicles
Ingredients
1/2 cup (120 ml) sugar
1 cup (240 ml) water
2 cups (220g) strawberries fresh or frozen
3 tablespoons lime
Small handful of fresh mint leaves
Direction:
Heat sugar with 1 cup water in a small saucepan until sugar dissolves. Pour into large food processor. Add strawberries, mint and lime juice. Mix! Pour into popsicle molds and freeze. .
I am a rhubarb addict! I love it! I can eat it raw with just some sugar and be happy. I know I am not alone â admit it. Who else does that?
