Can’t wait to sling some bagels and schmear and see everyone this weekend!!
Hey, hey bagel besties!! Things are looking up! We resurrected our bagel baking beast from the dead and she’s up and running, holding temp, cooling down, and turning off!
We mixed a batch of dough to test out Friday and if all goes well we will be selling bagels on Saturday and Sunday! We will just be doing bagels and schmear to go at the South Hill location, like the early days. We will not be toasting or making sandwiches and Kendall Yards will remain closed through the weekend. We’ll post tomorrow about Saturday and Sunday pre-orders and when they will be available.
Next week we will be back to business as usual starting Wednesday at both locations, full menu, full staff. We are still on a day by day basis, but we are cautiously optimistic and this is what we are planning for the last week of December.
We are still looking for an oven but it’s something we don’t want to make any rash decisions about. Most of the steam rack ovens that we are looking at are 6-8 weeks out and close to $40K new, so it has to be right.
Thanks again, to my neighbors Travis and Heleen Dewey, for coming to my rescue! Travis really went above and beyond to help us out. We are so, so lucky for ALL the support we received this past week.
See you soon!!
Bagel besties are the bestest! Thank you, thank you, thank you for all the love and support this past week! All the calls and messages with ideas and leads on equipment parts has been incredible. My neighbor of 15+ years saw my post and reminded me that her husband is a maintenance engineer and has years of commercial baking equipment repair experience. Did I know this?Jackpot! He met me at the shop on Sunday(what a saint!) and Monday he was able to get it fired up and holding temp for many hours… unfortunately it wouldn’t turn off. We’re making progress, but we still need some parts. The best thing is just getting a second opinion on the situation from an independent source that I trust. Absolutely priceless! Thank you Travis and Heleen!
We had so much activity through the eGift Card link, that an account review was triggered by Square. They disabled the link Saturday morning so we had to pivot to selling the paper/plastic gift cards through our online store! The link is working again, yay. We will be loading all the plastic gift cards on Tuesday and you’ll get an email when you can pick them up. It will most likely be during Scoop hours starting Wednesday. If anyone needs them sooner or in different denominations just email me, [email protected]. We’ll keep the 35% off sale through at least Friday. Thank you again for supporting us this way!
We were able to get all the employees on standby and they can start claiming unemployment right away while being able to pick up shifts to get the shops reset. They have been absolutely amazing and understanding!
It looks like we will be covered by insurance for some of our losses, so that’s great news as well. Thanks to our insurance agent Matt for reviewing our coverage and getting a claim opened first thing this morning!
My dear friend Beth, my bagel mentor from NJ reached out and jumped right in with ideas for new ovens. She got me in touch with an amazing contact and we’re working through our options! She is just so knowledgeable and willing to share her experience in the industry! We have talked and texted for the past few days and it has been a lifesaver!
More shout outs in my next post!
TL;DR
We’ll be closing for several weeks to remodel and get a new oven.😞
We love our employees!🥰
We’re discounting our e-Gift Cards 35%!🤑
Dear Bagel Besties, it’s not looking good. It seems that our beast of an oven has died at the ripe old age of 25! While we had plans to replace it soon, we had hoped to make it to our 2nd Birthday, which is this weekend!
Unfortunately, Hobart was unable to find or source the parts. They said they would have to fabricate the parts and it would take 3-4 weeks. So that wasn’t going to work. When I bought this oven in 2021, there were two of the same models available. The second was still available so we pulled the parts we needed with plans to buy it to keep us going until the first of the year. Sadly, the parts we pulled didn’t work this morning. So here we are. The thing is we’ve been holding off expanding into wholesale until we got a new oven. This turn of events has accelerated our plans and we’re determined to make the best of it.
With that being said, we’re going to have to close for the rest of the year. On a good day a new piece of equipment might take a week or so to order and another week to ship. One of the reasons we got this old oven was, back in 2021 new equipment was back ordered 30-40 weeks. Ovens and walk in coolers were especially hard to get. We needed an oven that would work with single phase power because of our old building. It was going to take $30K to bring 3 phase to the building, not gonna happen. We were able to get our giant dough mixer and bagel roller built to work with the building. We found a roll in rack oven in town and Hobart was able to rebuild it with a single phase motor. It was a great solution for all of our time and money constraints. In the end it’s still an oven from the late 1900’s. We’re grateful it got us this far. Enjoy the video of us getting it into the shop and set in place! All of this to say, getting an oven to work in our space will take weeks to get, especially this time of year.
We are working on finding another kitchen to bake out of as well. While we probably won’t bake daily, we could potentially do weekends or pre-orders like we used to do when we first opened. We tested one kitchen/oven out today. And while it didn’t work out, we’ll keep trying other ovens and spaces.
My biggest concern right now is that our employees are ok! I feel absolutely sick that they are having to go through this. We’ve had such a great year! Our 2nd location has done well and the majority of our team have been with Hidden Bagel for over a year. It’s just not fair. They deserve to feel safe and stable! From my conversations with the Employment Security Department today, most will be eligible for standby unemployment and I’ve submitted the paperwork to hopefully get them approved faster. They will get paid next week, we’ll make it happen. We may also have shifts available at The Scoop.
The other part of my day was crunching the numbers. The kind of oven that we need for more bagel production, range in price from $23K-40K, plus shipping and tax. We may have to get more electrical work and other work done to remove the old oven and install the new one. While we have savings, credit, and financing options… we will still need a buffer for everything else. The reason we’ve stayed the hole in the wall kinda place is for months like this. As much as I want a new floor, I also need cash on hand.
To ease the financial burden, we're offering our gift cards at a 35% discount, similar to our pre-opening promotion in 2021. This way, we reward our loyal customers rather than spending more on leasing and financing. Discounted e-Gift cards are available right now on our website, www.hiddenbagel.com. We’ll have the plastic and paper gift cards available next week at The Scoop shops for all your last minute Christmas shopping.

Thank you to everyone that reached out and offered help and advice. I feel so lucky to be a part of the small business community in Spokane! I’m also so thankful for all of our amazing customers checking in on us and walking through our doors each and every day. Hidden Bagel has been such an absolute joy to be a part of these past 2 years. I can’t wait to see how we glow-up over the next month!
One of my many toxic traits is seeing the best in every situation and moving ahead confidently once a decision is made. I’m still wallowing a bit, since this affects my staff directly. I've been home sick since last Wednesday, so it's been particularly challenging to be away from them and the shops.
Please excuse the rambling above; I'm a little loopy on cold medicine.
We’ll be closed again today, Friday, at both shops. The short version of the story is that both our walk in cooler and bagel baking oven went down yesterday. The walk in cooler got fixed, but we are still waiting on the oven to be repaired, which should be this morning.
Thanks for your patience and understanding!
Sorry bagel besties, both shops will be closed today, Thursday 12/14. We’re experiencing technical difficulties at HQ. Sorry for the inconvenience!!
