Classic Chicken Dumplings a la Cracker Barrel
Ingredients:
4 cups chicken broth
2 cups cooked, shredded chicken
1 cup carrots, diced
1 cup celery, diced
1 cup onions, chopped
1/2 cup all-purpose flour
1/2 cup heavy cream
1/4 cup butter
1 teaspoon dried thyme
1 teaspoon dried parsley
Salt and pepper to taste
For the Dumplings:
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon salt
1/4 cup butter
3/4 cup milk
Directions:
In a large pot, melt the butter over medium heat. Add the onions, carrots, and celery. Cook until vegetables are tender, about 5 minutes.
Stir in the flour and cook for 1-2 minutes, until lightly browned.
Gradually whisk in the chicken broth, making sure there are no lumps. Bring to a boil, then reduce the heat and let simmer for 10 minutes.
Add the shredded chicken, dried thyme, dried parsley, salt, and pepper. Stir to combine.
In a separate bowl, mix together the dumpling ingredients until just combined.
Drop spoonfuls of the dumpling batter into the simmering broth. Cover the pot and cook for 15-20 minutes, or until the dumplings are fluffy and cooked through.
Stir in the heavy cream and cook for an additional 5 minutes. Adjust seasoning as needed.
