Last week, some of our THSA students had the chance to see their classroom lessons on sustainability in action at the Kitchen by Mike restaurant! ๐ฝ๏ธโจ As part of their business case study, they explored the restaurantโs innovative sustainable features and enjoyed a feast of delicious, locally-sourced seasonal dishes.๐ฟ๐จโ๐ณ It was a perfect blend of theory and real-world examples.

This week, we delved into our archives and found photos of former students practicing their Food and Beverage skills. This is something we still focus on in our 'Food and Beverage Operations' unit today. ๐๐๐ฅค
One of the key topics within this unit is 'Menu Management', which is important in running a successful restaurant. Designing a menu goes beyond just selecting dishes; it's about elevating the dining experience, telling your restaurant's story, connecting with your guests, and boosting your restaurant's sales and revenue. Mastering this skill is essential for any Food and Beverage Manager, as well as entrepreneurs looking to open their own restaurant. ๐ฝ๏ธ๐จ

In this role, Jasmine-Rose oversees the daily operations of the Executive Lounge, ensuring all guests are looked after throughout their stay and that her team is well-trained and supported within their roles. ๐

Hotels have evolved from NCR cash registers to software-based property systems (from Maxial to Fidelio through to the new virtual Opera), and now have advanced to applications such as HubOS, a Mulpha joint venture. Robotics and AI are the latest innovations, enhancing guest experiences and operational efficiency. ๐จ๐ฅ๏ธ

Our Professional Learning Centre (PLC) team has always been committed to enriching students with valuable industry experiences through Work Integrated Learning (WIL) approaches that combine theory with practice. ๐
Winery tours, such as our field trips to Bimbadgen, Yarra Valley, and most recently to Stanthorpe, provide students with a comprehensive understanding of wine production while also equipping them with practical skills and knowledge essential for the hospitality and tourism industries. ๐ท๐ฑ

Recently, THSA students went on a 3-day Stanthorpe Winery Tour and WSET Training organised by our Professional Learning Centre! ๐๐ท Here are some of the highlights from the field trip:
Day 1: The journey began at the Queensland College of Wine Tourism (QCWT), where Stacey Allen, co-owner of View Wines and Sancerre Estate, introduced the Granite Belt region, for being one of Australia's top producers of alternative variety wines, "Strange Birds" wines. Stacey also shared insights into the wines students would sample on the tour.
Next, Peter Orr, Manager at QCWT, led an engaging WSET session on grape growing, winemaking, and various wine styles. The day ended with a delightful dinner at QCWT and an inspiring speech from Brad Allen, co-owner of View Wines and Sancerre Estate. ๐คฉ๐ฅ
Day 2: Peter gave a hands-on pruning demonstration at the QCWT vineyard, followed by an immersive winemaking experience. Students participate in the winemaking process from grape crushing to bottling. The day ended with a wine tasting session featuring selections from Jester Hills and View Wines. ๐ท๐ง
Day 3: The final day featured an informative session by Peter Orr on principal grape varieties, wine examples, and the essentials of wine storage, service, and food pairing. The tour wrapped up with students taking a knowledge test and earning a globally recognized WSET qualification. ๐๐
This tour not only provided an in-depth introduction to wines but also equipped students with practical skills and knowledge.
