Healthy and Easy Chocolate Chip Cookie Recipe, courtesy of dietetic-student volunteer, Juwairiyah Shaikh.

Using no eggs, almond or oat flour instead of white flour, avocado oil or olive oil instead of butter and maple syrup or honey instead of sugar!

Ingredients:
2 cups of blanched almond flour or oat flour
¼ cup of cornstarch
1 tsp baking powder
Dash of Vanilla extract
6 tbsp pure maple syrup or honey or ½ tsp of stevia sweetener
2 tbsp avocado oil or olive oil
¼ cup coconut milk or any low-fat milk of choice
½ cup semi-sweet chocolate chips or dark chocolate chips
Optional toppings: nuts or berries of choice

Instructions:
Preheat oven to 350 degrees Fahrenheit.
In a large bowl, combine almond flour, cornstarch, and baking powder. Mix well.
In a small bowl, mix together maple syrup and avocado oil.
Add the oil and syrup mixture to the dry ingredients, along with vanilla and coconut milk. Mix well.
Now fold in chocolate chips until the chips are well distributed.
Now on a baking tray lined with parchment paper, form approximately 15-16 equal-sized cookies. Place each one on the tray and press lightly them into a cookie shape.
Bake for about 12-15 minutes or until they are a light brown shade on top. Then, cool completely before serving.

Storage:
In an airtight container for up to a week, in the fridge for up to 2 weeks or in the freezer for up to 6 months.
