Haddock & Chorizo Bites with Basil Lemon Mayo

Nigalia stepped up the cooking game last night after a weekend away I made these Bobby dazzlers and I think you are going to love these!

I got some lovely fresh fish from and thought this would be a lovely way to use up the haddock.

Method: Poach Haddock for 8 mins in Milk, with lots of seasoning and a bay leaf until cooked. Meanwhile bring to the boil 2 large Maris piper potatoes to make mash.
Leave to cool then mash your potatoes with butter and season well.
Begin to flake the haddock once cooled and add to a large mixing bowl, add in the mashed potatoes, fresh chopped parsley, juice of a whole lemon and finely chopped chorizo. You can fry this before if you like it crispy or just throw it in and let the airfryer do it’s work.

Now make little bite sized balls, then roll in egg and panko crumbs and cook in the airfryer for 10 minutes.

Once cooked plate them up and grate fresh Parmesan on top. I made a quick dip using Mayo fresh Basil and lemon juice mixed together ✌️!

I think they are one of the nicest things I’ve made in ages so I advise you all make these, also super healthy too 👀!
