Super Easy kids Favourite Chinese Chicken Curry

Ingredients
4 chicken breasts, cut into chunks
3 tsp cornflour
1 onion, diced
3 tbsp Olive Oil
1 tsp sugar
1 tsp of Kashmir Chilli
2 garlic clove, crushed
2 tsp Chinese 5 Spice
3 tsp curry powder
2 tsp turmeric
1 tsp ginger
500 ml chicken stock
3 tsp soy sauce ( dark)
handful frozen peas
rice to serve

Method
Step 1
Toss the chicken pieces in the cornflour and season with a touch of salt& pepper
and fry in a wok/pan for 2-3 mins until brown, i like to add a little splash of soy sauce to really soak into chicken..

Step 2.
Add a few drizzles of Oil To your wok/pan get it smoking, add in your Onions, Garlic & Ginger and cook for 5-6 mins, ( until soft) next add all your spices coat well and add 1 glass of water to prevent sticking.

Step 3
Add in your coated Chicken chunks and toss well, cook for 2-3 mins, so the chicken is taking on the spices. add your soy sauce and chicken stock, toss in your peas and a touch of Sugar and simmer for 10-15 mins..

Serve with Rice

Gochujang is a popular Korean condiment made from red chili peppers, rice, fermented soybeans, and salt. It has a thick, sticky texture and a savory, slightly sweet, and spicy taste.

Here's a simple gochujang fried rice recipe:

Ingredients:

3 cups cooked white rice, preferably day-old
2 tablespoons vegetable oil
1/2 cup diced onion
1/2 cup diced carrots
1/2 cup frozen peas
3 cloves garlic, minced
1 tablespoon gochujang paste
2 tablespoons soy sauce
2 teaspoons sesame oil
2 green onions, thinly sliced
Salt and pepper to taste
Egg(optional)

Instructions:

1. Heat the vegetable oil in a large skillet or wok over medium-high heat.

2. Add the onions and carrots and cook for about 2-3 minutes until slightly softened.

3. Add the frozen peas and minced garlic and cook for another 1-2 minutes until the peas are heated through.

4. Add the cooked rice to the skillet and break up any clumps with a spatula.

5. In a small bowl, mix together the gochujang paste, soy sauce, and sesame oil.

6. Pour the gochujang sauce over the rice and stir until the rice is evenly coated.

7. Cook for 3-4 minutes, stirring frequently, until the rice is heated through and the sauce is evenly distributed.

8. Season with salt and pepper to taste.

9. Garnish with sliced green onions and serve hot.

10. Top with a fried egg if you would like to add some protein!
