New Dish feature: Choripán. This beloved street food staple in Argentina has roots tracing back to the early 19th century 🇦🇷
The name "choripán" comes from a blend of "chorizo" the grilled sausage central to the dish, and "pan" the bread that encases it. This simple yet flavourful sandwich was traditionally enjoyed by gauchos (Argentine cowboys) during asados (barbecues) as a quick and satisfying meal.

Meet Nico, our new Head Chef at Sucre London. Nico’s culinary journey began in a small seaside town in Puglia, Southern Italy, where his passion for food was ignited at just 15 years old. Starting as a commis chef, Nico quickly advanced to managing his first kitchen by the age of 18—a testament to his dedication and talent.
Eager to expand his horizons, Nico travelled and embraced diverse culinary cultures before settling in London. In 2015, he joined Soho House as a Chef de Partie, before moving on to Bistrotheque in Hackney, where he mastered French fine dining and rose to the position of Sous Chef. But it was at The Oystermen in Covent Garden, a celebrated fish restaurant, where Nico truly made his mark. As Head Chef, he spent five years refining his culinary style, blending the flavours of his Italian roots with the experience he gained along the way.
Nico’s return to fine dining brought him to the kitchens of Mere, working alongside renowned chefs Monica Galetti and Sven Hanson Britt. Now, he’s excited to bring his passion and expertise to Sucre, where he continues to reflect his identity and culinary experience in every dish, with a unique approach to Argentine cuisine.
Some words from Nico: “I am excited to embark on a new culinary adventure here at Sucre. My goal is always to reflect my identity and roots through my dishes, and I am immensely grateful for all the opportunities that have shaped me into the chef I am today”.
