Year after year, the different generation of the Stentz family kept developing and modernising the estate. The winery is now ran by Marc Stentz, the 5th génération and his mother Jocelyne. In 2010, the winery has been certified Organic.

Domaine Modat is a 25-hectare vineyard located in Cassagnes, in the Agly Valley, near Perpignan. Established in 2007 by Philippe Modat, the estate practices organic and biodynamic viticulture. Philippe, has now entrusted the vineyard to his talented sons, Quentin and Louis. The vineyards is home to indigenous Roussillon grape varieties, including 115-year-old Carignan. In the past decade, the estate has constructed a modern winery and adopted biodynamic practices, focusing on gentle extraction, wild yeast fermentation, and minimal sulfur usage.
