James and Marie visited a sake brewery in Japan this spring, Domaine Kurodashō, known for producing unique rice field-specific sakes. The concept mirrors the single vineyard bottlings of wine regions such as Burgundy or Barolo.
Kurodashō offers three distinctive bottlings — Monryu, Fukuji, and Tako — highlighting different soils and microclimates. We now serve these sakes by the half glass using Champagne flutes, and due to their corked finish, we use Coravin to preserve their freshness. Additionally, we offer a sake flight for tasting and comparison. These pair beautifully with our crab tacos, roasted chicken, fish crudo, or beef tartare.
