METABEV spent time with mixologist Eartha at to find out what keeps things interesting for her at work, and to chat about how the use of fresh ingredients in spirits and cocktails can make for a drink that is truly special. ⁠

“Most of the inspiration for my cocktails comes from my childhood memories. So, I found that if you use fresh, local ingredients that people know, those cocktails will remind people of a certain time or place. It creates nostalgia.”

As a mixologist from England, J created a cocktail using gin that is uniquely English – all while he relayed his views on Hong Kong’s bar scene. ⁠

“The reason why I moved to Hong Kong is I saw that the London bar scene was slowing down a little bit and I wanted to go somewhere that was new and explosive and exciting. And it's why I came here to work. It feels more community focused, less of this specific kind of style of hospitality and management. It’s more open and exciting.”
