Wow. Amigos has been a long hard road to get here, but, like mother said, perseverance is the only thing that will take you there, against all odds, the resilience to go true, the impatience to be patient, all the praying among the time, never to lose the commitment to excellence everything we do with integrity to life, to cook professionally.
I'm not a chef. I'm a great hairdresser by trade with the same Mexican passion for this amazing food that my mother showed me, to be fussy for quality of the authentic flavor from my México. Because I was missing my food, my flavors cooking with my 3 sistersand my mum, I started cooking because that will bring my family memories back and then I started looking for my ingredients to make my salsas, Chipotle was unheard-of in 1995, avocados they were very expensive 6 or 9 dollars each, so I had to use different hot chillies, from India , then the corn tortillas or flour tortilla, slowly finding my way to cook and started to share the quesadillas with family and friends, everyone enjoyed. At that time, I used to say to my wife, can you imagine if I sale the quesadillas? Over and over, until 12 year ago the best part of life, my wife, allowed me to open the Mexican restaurant in Lower Hutt, my youngest sister Nina was here at that time and help me to organize the menu, decorating, etc, valuable help from her. Then, one of my customers from the hair salon said to me, no one goes to Lower Hutt to a restaurant. Too late for me, is all done and ready to go, so I say to myself, we will be the best in everything we do to pull the people over there. That was
the hardest and most amazing adventure in my career in business. Despite that, I got granted 5 stars by señor David Burton, food writer from The Dominion newspaper, we lost the battle in Lower Hutt, as on 2013 more or less was the trend to open "Mexican restaurants" in Wellington and people stopped going to Lower Hutt, so we opened 'the hole in the wall' (Wellington waterfront takeaway) and kept fighting to sell my Mexican food, very successfully, on beautiful days and even very bad days, as its an outdoor t/a, so when its windy and wet, its a challenge to get to our place, as well, we made it through the amazing beautiful Wellington weather, sometimes the rain didn't stop for weeks, no people around and then the earthquake in 2016 that sent a lot of people to work at home, then the noisy renovation on the Waterfront, we were working at 30 percent capacity, and then again the bad weather and more so, last September the bad weather that make us close for 4 months because of the rain.
The greater things are Wellington streets events and fairs as well Womad in New Plymouth that saved us all this time, we still on the battle, but, as we know, everything that is good doesn't last for ever and the hole in the wall will be shut down for good, because the building isn't earthquake safe and renovation is on the way, the best news is, remember my prayers? Well, finally they were headed. Along came a few people that (I find out later on) that they were trying our amazing food and invited us to see if we were interested in to the new greatest venue Willis Lane, my dream came true, all my prayers together, came along at the same time when I saw what they were doing, it was overwhelming and exciting, I showed my wife the plans and she loved it, but, she said, are you sure? Remember you are 64 years old, aren't you going to retire next year and I said, I pray for this,I work for this opportunity, to finally to be able to reach more people so I can share my Mexican delicious food, finally someone believes on what I'm doing. Thank you, thank you, thank you Hot Like a Mexican will be on Willis Lane. Bigger, better, more passionate just for the people that has been supported us true the years and new customers too.
