Many of our guests often ask what does the word “CANCHITA” means?

Canchita is the toasted Peruvian corn that is often served at restaurants and homes in Peru as something to nibble on prion or during your meal.

Sometimes, cancha is added as a topping to ceviche, adding a nice crunchy contrast to the dish.

Chef Tamara presented a “Seafood Ceviche Nikkei” made with Japanese Tuna, Snapper, Hamachi and Octopus marinated in a Yuzu Tiger’s Milk
