What the heck is going on?
A little story…. My name is Kevin. I grew up in Waltham, served on the Police Department until 2010. I always had a love of cheffing and baking. I moved to the west coast. I missed home. I wanted to create a little piece of the east coast out there. So I began the long trial and error process of creating the perfect cannoli. Personally cannoli for me is just a pastry. But with the move it encompassed the east coast for me. So I set out to make them. Now on the west coast there is not a good ricotta to be found. So instead of giving up, I decided to make it myself. What I created was a completely scratch made cannoli. I start with milk, flour, love. Just like an Italian grandmother. The finished product speaks for itself. What I love about doing things from raw/scratch ingredients is you can control EVERYTHING! Texture, taste, feel. It’s more time consuming but it’s 100% a better end product. One of my proudest moments as the Grumpy Baker was when a customer came into my shop back in Oregon. She said… “I heard you have cannoli.” I said “Yes I do.” She then said. “I got back three weeks ago from a trip to Sicily. I’m dying for a good cannoli.” Now at this point my heart started to race. My cannoli was based of something I had in the north end of Boston like 15 years previous. NOT BASED off something I had in Italy!!! But I gave it a shot and put together a cannoli for her. She took a bite. “Oh my Gosh that’s it!” Was her reply. I said. “What did you expect? Of corse it is.” Completely hiding my racing heart I knew I hit it out the park. Now I’m back in Boston, and can hold my cannoli up against the best of them. 😉 Not too loud though. Hard to make cannoli when your sleeping with the fishes.

I finally made the trek into the North End Italian district. It’s only an 8 min walk from where I am flipping pizza.
